Blueberry Perogies

- Filling: 2 c blueberries shopping list
- 1 tbsp butter shopping list
- 1/4 c sugar shopping list
- Dough: 2 c flour-sifted shopping list
- 2 eggs shopping list
- 2 tsp salt shopping list
- 1/3 - 1/2 c cold water shopping list
- 1tbsp butter shopping list
- powdered sugar shopping list
How to make it
- Filling:combine together in a bowl and microwave for 3 minutes.
- Dough: combine flour,eggs,& salt.
- Add h2o little @ a time-just until moistened & workable & holds together
- knead for a few minutes
- cut dough in half
- roll one half out to 1/4 " thickness
- cut dough into 4" circles
- for each perogie place a Tbsp. of filling in center of dough
- fold over to form a 1/2 moon
- crimp edges together w/ fork tines
- repeat w/ other half of the dough
- Boil a pot of water
- when the water is boiling add 1tbsp salt
- add perogies
- cook 5-7 min.( they will float when done)
- in a saute' pan melt 1 tbsp butter
- add perogies and sautee to desired texture
- transfer toa plate and immediately sift powdered sugar over hot perogies
- ENJOY!
