Blue Cheese N Chives Macaroni Recipe
This mac n cheese really DOES have the blues! I'm a blue cheese lover, so was thrilled when I found this online a few years ago! For best results use Maytag, or a Danish blue cheese.

Ingredients
  • 1 pound rotini pasta
  • 2 T EVOO
  • Kosher salt
  • 1/4 stick butter
  • 1/4 cup all purpose flour
  • 2 cups whole milk
  • 1 cup whipping cream
  • 3 cups grated cheddar cheese (I like colby/jack, here)
  • 1 1/2 cups crumbled blue cheese
  • 1 tablespoon minced fresh chives

Directions
  1. Preheat oven to 350°F.
  2. Butter 13x9x2-inch glass baking dish.
  3. Cook pasta in large pot of boiling water with evoo and 2 pinches kosher salt until tender but still firm to bite, stirring occasionally, about 8 minutes.
  4. Drain and rinse.
  5. Meanwhile, melt butter in heavy large saucepan over medium-low heat.
  6. Add flour.
  7. Cook 1 minute, stirring constantly (do not allow to brown).
  8. Gradually whisk in milk and cream.
  9. Simmer until mixture thickens slightly, whisking occasionally, about 3 minutes.
  10. Reduce heat to low.
  11. Add grated cheddar cheese and 1 cup crumbled blue cheese. Whisk until cheese melts, about 2 minutes.
  12. Season sauce to taste with salt and pepper.
  13. Add cooked pasta to sauce; stir to coat.
  14. Transfer mixture to prepared baking dish.
  15. Sprinkle with remaining 1/2 cup blue cheese.
  16. Bake until sauce begins to bubble, about 25 minutes.
  17. Sprinkle with chives and serve.
