Ingredients

1 pkg. yeast- (1/4 c)

1 1/2 c warm water

1 tsp sugar

2 beaten eggs

1 c evaporated milk

7 c bread flour

1/4 c soft butter

oil for frying (375 degrees)

powdered sugar

Directions

combine yeast, water, & sugar-let proof( become frothy) -if you are using yeast fron the fridge you must let it get to room temp.

mix ,eggs, milk ,salt , butter and proofed yeast

add first 4 c flour

mix

add rest of flour

mix

cover the dough & let sit overnight in the fridge

punch it down

roll it out onto a floured surface

cut into 4" x 4" squares

fry

lay on rack to drain

sift powdered sugar over beignets while still hot

ENJOY!

I have never made doughnuts before, but these beignets sound really good. Question, do you need to heat any of the ingredients other than the water for mixing the yeast into? Hope to try these soon. Thanks
