Ingredients
  • You'll need a Springform Pan and a tight mesh strainer if you don't have an electric mixer.
  • 2 8oz Pkgs softened cream cheese
  • 1 16oz Pkg Sour Cream
  • 5 Eggs
  • 1 cup Granulated Sugar
  • 2 Tbspns All-Purpose Flour
  • 4 Tbspns Lemon Juice
  • 1 Tbspn Vanilla Extract
  • 1 Can or Jar of Cherry Pie Filling
  • For crust, 2 - 2 1/2 cups Gingerbread Crumbs
  • 1 - 1 1/2 sticks of unsalted Butter

Directions
  1. In a large mixing bowl, mix the cream cheese, sour cream, lemon juice, sugar, eggs, flour and vanilla, beating until smooth.
  2. Oh yeah, and sometime in there, preheat the oven to 375F.
  3. Using a smaller mixing bowl, combine the gingerbread crumbs with enough butter to make a sticky, crumbly consistancy.
  4. Transfer to the bottom of Springform pan, making sure not to make the crust too thick like I did. (oops) Go up the sides if you have to.
  5. If you don't have an electric mixer, I'm afraid the mixture will be lumpy and gross. Put it through a tight mesh strainer into the pan on top of the crust. If you have an electric mixer, well, good for you. /=P
  6. Bake for about an hour, or until toothpick inserted in the middle comes out clean.
  7. Remove from oven, let cool a bit before taking it out of the pan. (I learned this the hard way!)
  8. If the sides are burnt, cut them off. When cooled enough, top with cherry filling, letting the syrup drip down the sides. Yummy!
  9. Bring to your friend's house and impress the crap out of them wit yo mad dope skillz.
