How to make it

  • In a large mixing bowl, mix the cream cheese, sour cream, lemon juice, sugar, eggs, flour and vanilla, beating until smooth.
  • Oh yeah, and sometime in there, preheat the oven to 375F.
  • Using a smaller mixing bowl, combine the gingerbread crumbs with enough butter to make a sticky, crumbly consistancy.
  • Transfer to the bottom of Springform pan, making sure not to make the crust too thick like I did. (oops) Go up the sides if you have to.
  • If you don't have an electric mixer, I'm afraid the mixture will be lumpy and gross. Put it through a tight mesh strainer into the pan on top of the crust. If you have an electric mixer, well, good for you. /=P
  • Bake for about an hour, or until toothpick inserted in the middle comes out clean.
  • Remove from oven, let cool a bit before taking it out of the pan. (I learned this the hard way!)
  • If the sides are burnt, cut them off. When cooled enough, top with cherry filling, letting the syrup drip down the sides. Yummy!
  • Bring to your friend's house and impress the crap out of them wit yo mad dope skillz.

    It looks terrific even if it did deflate a bit. I'm sure that the air didn't affect the flavor at all. This is a lovely recipe and I thank you from the bottom of my stomach!
