Ingredients
  • 1 1/4 cups all- purpose flour
  • 1/2 cup sugar
  • 1/8 teaspoon salt
  • 1/4 cup chilled stick of margarine or butter,cut into small pieces.
  • 3 tablespoons tub-style cream cheese
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/3 cup 2% milk
  • 3 tablespoon ricotta cheese
  • 1 teaspoon vanilla extract
  • 1 teaspoon grated orange rind
  • 1 large egg
  • 1/4 cup of dried apricots, chopped
  • 1/4 cup apricot preserves
  • cooking spray

Directions
  1. Preheat oven to 350 degrees F.
  2. lightly spoon flour into dry measuring cup and level with a knife, combine flour, sugar, and salt in a mixing bowl.
  3. cut in the margarine and cream cheese with a pasty blender or knives until mixture resembles coarse meal.
  4. reserve 1/2 cup of flour mixture for topping; set aside.
  5. combine the remaining flour mixture, baking powder, baking soda, milk,ricotta cheese, vanilla extract, orange rind, and egg.
  6. beat the mixture at medium speed of a mixer until blended ( batter will be lumpy) and fold in the chopped apricots.
  7. spoon the batter into an 8 inch round cake pan coated with cooking spray.
  8. dot the batter with apricot preserves and swirl the preserves into the batter using a knife.
  9. sprinkle the reserved 1/2 cup of flour mixture over the batter.
  10. bake at 350 degrees for 30 minutes or until cake springs back when lightly touched in center, cool the cake on a wire rack......
  11. garnish plate when serving with a slices of oranges

Great, now I have to go shopping! I love the sound of this,& can't believe I missed it before. Thanks for sharing. Gotta get some apricots and preserves. Can you think of a sub for the ricotta? I don't use it much and the rest would go to waste. How about some sour cream or blended cottage cheese? Thanks!
