Peach Pecan Bread

- 1(16 oz)can sliced peaches shopping list
- 6 tablespoons butter, melted shopping list
- 2 eggs shopping list
- 1 tablespoon lemon juice shopping list
- 2 cups all purpose flour shopping list
- 3/4 cup sugar shopping list
- 3 teaspoons baking powder shopping list
- 1 teaspoon cinnamon shopping list
- 1 teaspoon salt shopping list
- 3/4 cup chopped pecans shopping list
- 2 tablespoons peach preserves shopping list
How to make it
- Preheat oven to 350 degrees F
- Drain peaches, reserving 1/4 cup syrup
- Finely chop 1 cup peaches and set aside
- In blender, combine remaining peaches, butter, eggs and reserved peach syrup and lemon juice.
- Blend until just smooth
- Stir together dry ingredients
- Add egg mixture and stir until moistened
- Fold in reserved peaches & nuts
- Bake in greased 8 x 4 x 2 inch loaf pan for ONE HOUR
- Spread with peach preserves
- Cool in pan 10 minutes
- Remove & cool on rack
