Ingredients
  • 3 cups frozen shredded hash browns
  • 3/4 cup shredded Monterey Jack cheese
  • 1 cup diced cooked ham
  • 1/4 cup chopped green onions
  • 4 eggs
  • 1 can (12 oz) evaporated milk
  • 1/4 tsp pepper
  • 1/8 tsp salt

Directions
  1. Place potatoes in an 8 in square baking dish.
  2. Sprinkle with cheese, ham and onions.
  3. Beat eggs, milk, pepper and salt; pour over all.
  4. Cover and refrigerate for several hours or overnight.
  5. Let set before baking about 30 minutes.
  6. Bake, uncovered, at 350* for 55-60 minutes or until a knife inserted near the center comes out clean.

Oh, yummy, this will be on our table sooner than later.


So we had breakfast for dinner tonight! So good! Full of flavor! I am really bad about reading the full recipes before I make them so of course I didn't realize it needed to be refrigerated for a couple of hours until I was almost ready to make it. So basically I did let it sit for about 30 minutes. It took about an hour and half for mine to cook all the way through but I'm thinking that might have something to do with me not letting it sit longer. Anyway, regardless, very yummy and am going to be making again very soon!

I have had this printed out for over a year and still haven't made it - that does it! I think it was the having to refrigerate for a couple hours that has stopped me several times cuz I look at it at the last minute!
