I like to use red potatoes for this because of their moistness, but if you can get fingerlings they are by far my first choice. Make whatever quantity you need, but any leftovers make killer fried potatoes!!

Ingredients
  • 4 potatoe, washed and cubed (I prefer to leave the skin on, but you can peel them if you prefer)
  • 1 large Vidalia onion, diced
  • 4 to 8 cloves of garlic, peeled and sliced (depending on your tastes)
  • 4 tablespoons butter, plus extra for greasing foil
  • Garlic salt, to taste
  • Fresh ground pepper, to taste
  • Heavy duty foil (be sure to use heavy duty!)

Directions
  1. Generously butter the heavy duty foil.
  2. Layer potatoes and onions in the center of foil.
  3. Scatter sliced garlic over layers, then dot with pieces of butter. Sprinkle seasonings over all.
  4. Roll foil up securely, crimping ends completely so juices don't escape.
  5. Place foil packet on grate over hot coals. Bake for about 45 minutes.
  6. Open the foil packet very carefully so as not to burn yourself with the escaping steam. Empty the contents into a serving bowl. The bottom layer of potatoes should have a wonderful crusty texture and carmelized color, while the top layer remains steamed and soft. The garlic and onions roast in the cooking process and give a nutty, sweet flavor to the potatoes. This is our one of our favorite ways to do potatoes during our "grilling season". This summer I am going to try adding some diced sweet potatoes to the mix.

I made this last night to go along with our grilled chicken. I used the fingerlings and they are so good. A huge hit. Thanks for sharing.

Whow. this sounds great to an Onion Love, which I am!!!

This one is a recipe for me thanks for sharing.

This recipe is delicious! I know b/c we have it almost every time I visit during the summer! ;) Nate and I have never been able to make it as good on our gas grill, though.

Well ...another potato recipe I cannot pass up! Looks wonderful...~M

Wow, sounds so good! Will be trying this one real soon!

Recipe sounds great as we eat lots of all 3 ingredients. LOL

Sounds yummy and easy. One tip I learn from Jamie Olivier to seal the foil is rub some egg on the foil before folding, so, even if it is not heavy duty foil, it still wont leak

Tried tonight, taste good...
Thanks so much...

Mmm---d--e--l--e--c--i--o--u--s....!!!
