  • 2 cucumbers, peeled and very thinly sliced
  • salt
  • 1 sweet onion, very thinly sliced
  • 1/3 cup cider vinegar
  • 1/3 cup water, and just a “splash” more
  • 4 tablespoons white sugar
  • salt and pepper, to taste (I use a good 1+ tsp of salt and about 5 good shakes of pepper)

Directions
  1. Put prepared cucumbers in a large bowl and heavily salt them; let them set for 30 minutes, then generously rinse the salt off of the cucs and drain them well.
  2. Add sliced onion (Vidalia onions are the best, when they’re in season).
  3. In a 1 cup measuring cup, measure in the 1/3 cup vinegar, add water to equal just a tad bit more than 2/3 cups total liquid.
  4. Add sugar and stir briskly to dissolve it in the liquid.
  5. Season with salt and pepper – you really need to “taste test” here to get it to your preference of saltiness/sweetness.
  6. Pour mixture over cucs and onions and let set 30 minutes or more.
  7. You can serve them immediately, but the flavors “blend” if you can let it set for awhile.
  8. Refrigerate leftovers (and if you're like Maggie, eat them the next day for breakfast - or as Abby likes to do: eat them while playing cards after dinner!!).

My mom used to make these! I usually make the cucumbers in sour cream and every once in a while get a craving for cucumbers in vinegar...what my mom called them. Think I'll make these in honor of mum.


I agree, crabhappy - I love them in sour cream, too, but I usually end up making them just in the vinegar to cut out a FEW calories (I like to think I'm eating healthy then!)...good summer eatin'!!

Oh these sound wonderful. Had to laugh at your description though... my screen name Magandab should actually be Mag and Ab. Maggie and Abby, my golden and my chocolate labrador.


Yep.. these are on the table all cucumber season... I snack all day on them.. I tried them on Haley.. she said "nope, I like real ones!" Can't yell.. she picks and eats with salt... That and her tomatoes!

My mom, my grandmother and great grandmother all being great gardeners have all had big veggie gardens and they have all served cucumbers like this...so good.

Hey, my Mom made these almost to the tee. Her one differance was that she added a couple tablespoons of sour cream to the final product and let it set for at least an hour before serving. Thanks for such a great post!

This is a big favorite down here where I live... growing up we always had a bowl of these at all our big meals...I love the *tanginess* of these...
