Cucs And Onions For Maggie

- 2 cucumbers, peeled and very thinly sliced shopping list
- salt shopping list
- 1 sweet onion, very thinly sliced shopping list
- 1/3 cup cider vinegar shopping list
- 1/3 cup water, and just a “splash” more shopping list
- 4 tablespoons white sugar shopping list
- salt and pepper, to taste (I use a good 1+ tsp of salt and about 5 good shakes of pepper) shopping list
How to make it
- Put prepared cucumbers in a large bowl and heavily salt them; let them set for 30 minutes, then generously rinse the salt off of the cucs and drain them well.
- Add sliced onion (Vidalia onions are the best, when they’re in season).
- In a 1 cup measuring cup, measure in the 1/3 cup vinegar, add water to equal just a tad bit more than 2/3 cups total liquid.
- Add sugar and stir briskly to dissolve it in the liquid.
- Season with salt and pepper – you really need to “taste test” here to get it to your preference of saltiness/sweetness.
- Pour mixture over cucs and onions and let set 30 minutes or more.
- You can serve them immediately, but the flavors “blend” if you can let it set for awhile.
- Refrigerate leftovers (and if you're like Maggie, eat them the next day for breakfast - or as Abby likes to do: eat them while playing cards after dinner!!).

My mom used to make these! I usually make the cucumbers in sour cream and every once in a while get a craving for cucumbers in vinegar...what my mom called them. Think I'll make these in honor of mum.
