- 1/2 large cabbage head, green type, thinly sliced (about 8 cups) shopping list
- 2 1/2 pounds russet potatoes, peeled and coarsely chopped shopping list
- 1/2 cup unsalted butter, cut into pieces shopping list
- 1/4 cup green onions, chopped shopping list
- 1 cup cheddar cheese, grated and packed shopping list
How to make it
- Cook cabbage in large pot of boiling salted water until tender, about 2 minutes. Transfer to bowl using slotted spoon; drain. Return water in pot to boil. Add potatoes and cook until tender. Drain; return potatoes to pot. Add butter and mash with masher. Mix in onions, then cabbage. Season to taste with salt and pepper.
- Butter either 8 1-cup souffle dishes or 1 8-cup baking dish. Pre-heat oven to 350. Spoon mixture into prepared dish(es) and sprinkle with cheese.
- Bake until heated through and cheese bubbles, about 25 minutes for small dishes or 35 or baking dish.
