Don't you love the name of this?! I've been making this for YEARS and got it from Bon Appetit who got it from The Scottish Lion Inn in New Hampshire. So good!

Ingredients
  • 1/2 large cabbage head, green type, thinly sliced (about 8 cups)
  • 2 1/2 pounds russet potatoes, peeled and coarsely chopped
  • 1/2 cup unsalted butter, cut into pieces
  • 1/4 cup green onions, chopped
  • 1 cup cheddar cheese, grated and packed

Directions
  1. Cook cabbage in large pot of boiling salted water until tender, about 2 minutes. Transfer to bowl using slotted spoon; drain. Return water in pot to boil. Add potatoes and cook until tender. Drain; return potatoes to pot. Add butter and mash with masher. Mix in onions, then cabbage. Season to taste with salt and pepper.
  2. Butter either 8 1-cup souffle dishes or 1 8-cup baking dish. Pre-heat oven to 350. Spoon mixture into prepared dish(es) and sprinkle with cheese.
  3. Bake until heated through and cheese bubbles, about 25 minutes for small dishes or 35 or baking dish.

My Mom did this one in her Resturant. I don't know where she got the recipe but it was fantasic. It was the first thing gone on Sunday.She died last October so I can't ask her and it was not in her recipes file.

Thank you for the link to this I have added it to my recipe box. I have a head of cabbage just looking for a recipe. I think, besides your suggested Corn Beef recipe, that this would be good with Polish sausage.
