I love deviled eggs and not dry ones. A platter of these disappear in minutes, never leftovers. These are juicy with the crunch of fresh diced sweet pickles. They are just fabulously addicting. Perfectly boiled, no grey and tender white houses.

Ingredients
  • 12 large eggs
  • 6 Tablespoons Best Foods or Hellmans mayonnaise
  • 8 tablespoons fine diced whole sweet pickles
  • 4 teaspoons sweet pickle relish
  • 1 Teaspoon mustard
  • 1/2 Teaspoon prepared horseradish
  • 1/2 Teaspoon Pepper
  • 1/4 Teaspoon salt
  • Paprika powder
  • I finally found the right cooking time for boiled eggs. Beautiful yolks, no grey and the white is tender not like rubber.

Directions
  1. Remove eggs from refrigerator for an hour.
  2. Place eggs into a large pot of warm water.
  3. Bring to a boil and boil 2 minutes MAXIMUM.
  4. Turn off heat leaving pot on the burner for 12 minutes..
  5. Place eggs in iced water to loose shells.
  6. Remove yolks.
  7. Mash yolks.
  8. Dice two 3 inch sweet whole pickles
  9. Mix diced pickles, sweet relish and all other ingredients.
  10. Place mix in a plastic bag, cut off a corner and fill eggs.
  11. Make them more interesting by cutting a large olive in 3 pieces.
  12. To make them even more distinct place a piece of pimento in the center of each olive.
  13. In any case, lightly dust with Paprika powder.

Boy, could I have used this on Saturday! My sister-in-law usually is in charge of making these. I did use another recipe from GR, but didn't realize I was missing the sweet pickles until my first bite! I also got busy and forgot to ice the eggs- and paid royally! I'm bookmarking this for future reference! Thanks!

I figured with the 4th of July coming up, it was a good time to post. Make sure and not crowd the pan you want the eggs moving around so the yolk centers. It is best to do muliple batches. If your going to do a lot then set the eggs out about an hour before to take off the cold otherwise if you place a second batch in the previously boiled water the shells will split open.


Well, did you ever hear the story of when my mom dusted her deviled eggs with the paprika and we realized the paprika could walk? It was full of weevils and we were happily sprinkling away on our platter of beautifully filled eggs!!!! When we saw it moving, we panicked. Your deviled eggs look infinitely more appetizing. Like the olive garnish. Very yummy.

I love deviled eggs. Your right about the eggs if you don't cook them just right, your mixture won't come out right. If they are just a little undercooked they'll have lumps.

Dang the eggs in the pics I made yesterday, I just finished the last two halves about 10 minutes ago. Got all the tomatoes watered, whoa, the heat today will be 92 and they are going to go nuts. Alrady tomatoes, cucs and watermelons are running like its the Olympics, already a watermelon about 1 inch. Come on Mother Nature, lay it on me.
