How to make it

  • Peel horseradishes with vegetable peeler
  • Prepare tissues at your side. ( I really mean it)
  • Grate Horseradishes with hand grater. (They are usually too tough for most electical graters or food processors)
  • If you do decide to use a food processor, cut Radishes into small pieces first to avoid damaging the blades.
  • DO NOT RUB YOUR EYES!
  • When your tears have dried and you have recovered and you have stopped cursing me for this recipe, add sugar and vinegar.
  • Mix well
  • Store in small , sealed , glass containers.

    I made this today and it worked out very well. I took the precaution of using latex gloves to handle the root. I did use my Cuisinart and diced the root into small pieces.

    I had just prior ground up some fresh ginger root. I intentionally left the dribs and drabs in the bucket as I find those two roots compatible and it wasn't an overly large amount of ginger.

    I used only a single smaller root which filled the traditional jar size you get when you buy horseradish commercially twice. So one root was plenty for my home and my mother-in-laws. I cut the ingredients proportionately.

    I substituted apple cider vinegar and agave nectar but I don't think that makes any enormous difference in the end. The thing that bothers me most is I didn't need the tissues. My root seemed quite fresh, was a nice firm but still pliable white shade but it didn't burn my eyes. Perhaps because of using the Cuisinart instead of a hand grater.

    End Result was good news! I will never buy the commercial stuff again. It is perfect and I'm looking forward to a nice roast beef to go with. Thank you so much for your post.

    Hey buddy....Its been awhile since I've made this but did so today, and wow!!!....Yes...Forgot how powerful the Horseradish root is.....Lets just say. forget the tissue paper and hello Paper towels.....Took the finished product to a family get together, and it was devouwered.....A Big hit...thanks again...Stewie

    I have to try making this at home. I find that most store brands are not that hot. I used to buy some at our local farmer's market and that stuff was good but those vendors haven't been there for a couple of years. I'm told that when it's freshly made it is much stronger. How much would you say 2 roots are by weight aproximately?

    I have checked on several horseradish recipes and know your warning is real! Hear if you need to be in a well ventilated area like outside! My husband grew horseradish root in our garden - it takes two years to harvest and I need to do something with it so I'll give your recipe a try -thanks. Oh and I won't be cursing you but my husband - he did not get the whole root and it is popping up everywhere!
