Ingredients

How to make it

  • Dough:
  • Combine flour and salt.
  • Add the remaining ingredients.
  • Kneed until smooth and elastic.
  • Cover and let stand for at least 15-20 minutes.
  • Roll out thin on a floured board or surface.
  • Cut out 3" rounds with a cookie cutter, drinking glass or beer mug.
  • ~*~*~*~*~*~*~*~*~*~*~*
  • To make:
  • Add 1 Tbsp. of filling to each round of dough. Fold over and pinch the dough together sealing well. When boiling add a little salt and oil to the water so they don't stick together. When they come to the surface, they're ready. I like to lightly fry them in a little oil and butter before serving. Garnish with freshly chopped parsley and sour cream on the side.

    Long time ago, my mom used to make varenyky. She made them with just dry cottage cheese and egg filling and served them up with a wonderful rich cream gravy called schmaundtfat in low German. Sometimes she added fried onions to the gravy too. I have always wanted to try making them myself. One of these days!!! Can you come and teach me? Mom is not so good on her feet these days (She's 81) and hasn't made them for so long I'm not sure she'd remember how, LOL Thanks for the great post, and pay no nevermind to poor ratings. Keep up the good work,Sweets.

    LOVE pierogies. When I was little, we had Polish neighbors and when they made pierogies and other foods from their homeland, they always shared with the community. This is a wonderful recipe and thanks so much for reminding me of our kind and thoughtful neighbors.
    I don't understand why miserable people ruin the rating of a good recipe either???

    My family and I have been making Pierogies for a very long time. You've got my 5 forks on this great recipe. I don't understand why people go around giving nasty low ratings just because they don't like the recipe?

    I love perogies, I've taken the leftovers from a pork roast made with sauerkraut and potatoes, cut them up real small and used this mixture in my perogies, my mom use to love me to make them this way. Great post, you have my 5

    I love your recipe. At our house, perogies and vereneky are two different things - both delicious. I must ask my Mum for her Vereneky recipe.
    Potato and cheese are my favour perogie fillings -my Mum has talked about sauerkraut filling but not made it that I can ever remember.
    The prune sounds fabulous - have you ever made them with fresh blueberries or sour cherries - topped with sour cream and sugar...mmmmm.
    Every summer at our family cottage, my mother invites all the relatives and friends from the 'old country' over for a perogie feast, and there's never a morsel left. Thanks for this - and for some great memories.
