Ingredients

How to make it

  • With sharp knife, cut corn kernels from cob. Also scrape pulp out with back of knife. Set aside.
  • Cut bacon in half and fry in heavy iron skillet until crisp. Drain on paper toweling.
  • Discard all but 4 Tbsp. bacon fat. Add corn. Cook, without stirring, until bottom is browned (lift corn from the side with a spatula to check).
  • When well browned, add milk and seasonings, stirring until well combined. Cover and cook over low heat 10 min. longer. Arrange bacon over the top and serve.

Just about to try this dish. Looks great and easy. But ...
cooking temp for corn would be very helpful also cooking time.
All those who made this dish in the past confirm it but none correct the obvious error.
I am guessing med heat and 10 min. then add milk follow temp and time.
    Wish me luck lol

Drool. If you have a Trader Joe's nearby, their canned corn beats frozen easily.

I live in New Orleans and have had the pleasure of growing a few creole tomato plants this year -I canned some a few weeks ago and then added a jar to some fresh corn like this, minus the milk. YUMMMYYYY
