Ingredients

Cheesy Beef & Cornbread Pie

Preheat oven 350 degrees.

1 Pd. Lean ground beef (cooked and drained)

1 large chopped onion

1 cup of chopped green peppers

1 clove chopped garlic (optional)

Add 1 can of condensed tomato soup,

1 cup of water,

1 teaspoon of black pepper

1/2 teaspoon of cayenne pepper

1 teaspoon of paprika

1 tsp sugar

1 cup of whole kernel corn, drained

2/3 cup diced tomatoes

(Mix all well and heat in skillet)

(Corn bread top)

Combine 1 1/2 cups of corn meal

1/4 cup flour

1 tablespoon of sugar

1/2 teaspoon of salt,

1 teaspoon of baking powder,

1 beaten egg

2/3 cup buttermilk

2 tablespoons of vegetable oil.

Mix well

TOP:

Over (all) - also 1 cup sharp cheddar cheese

Directions

In a large iron skillet, brown the lean ground beef, the green peppers,and 1 large chopped onion. (drain well)

Add the remaining filling items

Mix all the filling well (in the iron skillet) Heat until boiling.

Pour the cornbread mixture over the simmering ingredients in the skillet

1 cup grated sharp cheddar cheese over all

The cornbread batter may disappear into the meat mixture but it will rise during baking and form a layer of cornbread.

Bake for 20 or 30 minutes or until the cornbread is lightly browned.

DELICIOUS WITH A BIG BOWL OF FRESH GREENS OR GARDEN SALAD!
