Spinach and Herb Potato Casserole

- 6 large or 8 medium potatoes, peeled, boiled and drained shopping list
- 1 pkg. (8 oz.) cream cheese, softened shopping list
- 1 cup (8 oz.) sour cream shopping list
- 1/2 cup (1 stick) butter or margarine shopping list
- 1-1/2 tsp. salt shopping list
- 1-1/2 tsp. dried dill weed shopping list
- 1/4 - 1/2 tsp. pepper shopping list
- 1 pkg. (10 oz.) frozen chopped spinach, thawed (or cooked) and well drained shopping list
How to make it
- In a large bowl, whip potatoes, cream cheese, sour cream and butter until smooth. Add all remaining ingredients and continue to beat until well mixed. Spoon into a 2 qt. casserole dish that has been sprayed with oil. Bake, covered, at 375ยบ for 20 minutes.
- Casserole can be prepared ahead and refrigerated, then baked just before serving. Be sure to allow to come to room temperature for 30 mins. before baking.
