How to make it

  • In a large bowl, whip potatoes, cream cheese, sour cream and butter until smooth. Add all remaining ingredients and continue to beat until well mixed. Spoon into a 2 qt. casserole dish that has been sprayed with oil. Bake, covered, at 375ยบ for 20 minutes.
  • Casserole can be prepared ahead and refrigerated, then baked just before serving. Be sure to allow to come to room temperature for 30 mins. before baking.

    Very good potatoes. You could add a little more S&P but there is a lot of good flavor going on in there without.

    I've been trying to think of a new way to serve potatoes...I'm getting so tired of plain old mashed! I'll have to try this one soon! Sounds and looks yummy!

    Oh my babs! These were so good, and I can't figure out why I didn't know of this combo, before! :) The ONLY change I made was to use fresh spinach which I chopped and cooked down for only about 3 minutes. I used all the butter and sour cream and cream cheese, BUT maybe a few more potatoes than was intended...we were VERY pleased with the texture and consistency, so I think that's a fair thing to make a matter of preference. :) Thank you so much for the recipe, these will be made, again.

    Guess what I made last night??? This was sooo good!! I did use a little less cream cheese and butter, and I used 5 potatoes. I loved it!! Thanks, I'll be putting it on my blog later :)

    Hi 22566 - hope you give it a try. The little kids will think it's fun eating "green" mashed potatoes and they won't be any the wiser that it's spinach. The dill is what really gives it the great flavor. Let me know if you like it or not. :-)
