Hi 22566 - hope you give it a try. The little kids will think it's fun eating "green" mashed potatoes and they won't be any the wiser that it's spinach. The dill is what really gives it the great flavor. Let me know if you like it or not. :-)

Oh my babs! These were so good, and I can't figure out why I didn't know of this combo, before! :) The ONLY change I made was to use fresh spinach which I chopped and cooked down for only about 3 minutes. I used all the butter and sour cream and cream cheese, BUT maybe a few more potatoes than was intended...we were VERY pleased with the texture and consistency, so I think that's a fair thing to make a matter of preference. :) Thank you so much for the recipe, these will be made, again.
