Pork Loin With Roasted Garlic Vinaigrette Recipe
I made this last night for my boyfriend and myself, but it is definitly beautiful enough to be company dinner food. Simply wonderful.

Ingredients
  • Pork Loin:
  • 3.5 - 4.5 # pork loin
  • Salt and pepper
  • Vinaigrette:
  • 2 heads roasted garlic
  • ¼ cup parsley, chopped
  • ½ cup balsamic vinegar
  • ¾ cup evoo
  • 1 tsp sugar
  • 1 tsp each salt and pepper
  • 2 tbsp water

Directions
  1. Preheat the oven to 475
  2. Roast the garlic bulbs for 1 hour
  3. Place the pork in a medium, heavy roasting pan
  4. Season on all sides with salt and pepper
  5. Place pork in oven after the garlic has been roasting for 30 minutes
  6. Roast 30-40 minutes, or until cooked through
  7. Remove from roasting pan, tent with foil, and let rest for 15 minutes
  8. For the vinaigrette:
  9. Once the garlic has cooled to the touch, squeeze the cloves out of the skin
  10. Place in a blender with the parsley and balsamic vinegar
  11. Pulse until blended
  12. Drizzle in the evoo while the machine is blending
  13. Add the sugar, salt, pepper, and water and blend until incorporated
