Herb Tomato Bread

- 2 tbs olive oil shopping list
- 2/3 cup red onion, minced shopping list
- 2 tsp garlic, minced shopping list
- 4 tbs dried basil, divided use shopping list
- 1 tbs dried oregano shopping list
- 2 tbs sugar shopping list
- 2 pks yeast or 2 tbs shopping list
- 1/2 cup warm water (not over 110 degrees) shopping list
- 1 can 28 oz diced tomatoes, drained shopping list
- 1/2 tsp black peper shopping list
- 1.2 tsp salt shopping list
- 1/2 cup whole wheat flour shopping list
- 4 1/2 - 5 cups bread flour shopping list
How to make it
- Cook onion, garlic, basil, oregano in olive oil about two minutes
- set aside and cool to room temperature
- Dissolve sugar and yeast in warm water and let stand until bubbly.
- Add tomatoes, salt, pepper and whole wheat flour and about 4 cups of bread flour.
- Add onion, garlic, herbs to mixture
- If using mixer, use dough hook and mix until dough pulls away from mixer bowl. If it doesn't pull away, add flour a litle at a time until this happens. Continue kneading until you can take a silver dollar size piece and stretch it without tearing.
- Let stand covered until doubled.
- Punch down and place on cutting board or bench with a little flour to prevent sticking. Divide dough into 2 or 3 pieces and form into round loaves.
- Place on greased baking sheet and let rise until nearly doubled. Do not let this overrise. It will rise again in the oven.
- Brush with egg wash and sprinkle additional basil on top for garnish
- Place in 350 degree oven .and bake for about 30 minutes until lightly browned and you can tap bottom and it sounds hollow. Larger loaves will take slightly longer.
- Cool on rack
- Slice with serrated knife.
