This bread makes 2 or 3 (depending on size) round loaves. It's pretty and tasty and although the dough is sticky, it's easy to make. Makes great sandwiches or cheese toast.

Ingredients
  • 2 tbs olive oil
  • 2/3 cup red onion, minced
  • 2 tsp garlic, minced
  • 4 tbs dried basil, divided use
  • 1 tbs dried oregano
  • 2 tbs sugar
  • 2 pks yeast or 2 tbs
  • 1/2 cup warm water (not over 110 degrees)
  • 1 can 28 oz diced tomatoes, drained
  • 1/2 tsp black peper
  • 1.2 tsp salt
  • 1/2 cup whole wheat flour
  • 4 1/2 - 5 cups bread flour

Directions
  1. Cook onion, garlic, basil, oregano in olive oil about two minutes
  2. set aside and cool to room temperature
  3. Dissolve sugar and yeast in warm water and let stand until bubbly.
  4. Add tomatoes, salt, pepper and whole wheat flour and about 4 cups of bread flour.
  5. Add onion, garlic, herbs to mixture
  6. If using mixer, use dough hook and mix until dough pulls away from mixer bowl. If it doesn't pull away, add flour a litle at a time until this happens. Continue kneading until you can take a silver dollar size piece and stretch it without tearing.
  7. Let stand covered until doubled.
  8. Punch down and place on cutting board or bench with a little flour to prevent sticking. Divide dough into 2 or 3 pieces and form into round loaves.
  9. Place on greased baking sheet and let rise until nearly doubled. Do not let this overrise. It will rise again in the oven.
  10. Brush with egg wash and sprinkle additional basil on top for garnish
  11. Place in 350 degree oven .and bake for about 30 minutes until lightly browned and you can tap bottom and it sounds hollow. Larger loaves will take slightly longer.
  12. Cool on rack
  13. Slice with serrated knife.

I am going to try this one too. I think I will substitute sun dried tomatoes though cause that's what I have. :)


Cooling on the rack now. Made it in a loaf pan. Here's a pic. It came out a little dark. Should have used a flash, but it's after midnight here. The brain slips a little. The loaves came out just fine. This little barn owl ate half a loaf while it was still warm.

I stsrted making bread this year and I think I'm at the point where I can experience with making some artizan breads, like this one. It looks and sound delicious!!!


Speaking of bowls of soup, I bet this would be a great "bread bowl" for soup.
Question on the recipe: After activating the yeast when you go to step 4, do you add the flour first or do you add in the order listed. I ask, because I wonder if adding tomatoes straight into the yeast might "kill" the fermentation process, because of the acid?


Put it all together. it only takes a minute if you have everything ready.


Chef, have you tried it with peeled, seeded and drained fresh tomatoes? This looks like great sandwich bread!

Delicious! I've had Tomato Bread. When I was a bakery manager, we made it but, I know yours is much better. Your's is scratch, ours wasn't. Thanks for the great recipe.
