Ingredients
  • 3 Cups Cooked Chicken, cut into chucks approximately olive size
  • 1 Tbls Minced Red Onion
  • 1 Tsp Salt
  • 2 Tbls Lemon Juice
  • 1 Cup Celery, thinly sliced
  • 1 Cup Seedless Red Grapes
  • 1/3 Cup Mayonnaise
  • 1 Cup Tangerine segments or 1 11oz Can Manderin Orange Segments
  • ½ Cup Slivered Almonds, toasted
  • 6 -8 Lettuce Leaves
  • 8 – 10 Kalamata or Black Greek Olives, pitted

Directions
  1. In a bowl, combine Chicken, Onion, Salt, Lemon Juice, and Celery. Cover and refrigerate several hours to marinate stirring occasionally.
  2. When ready to serve, toss Chicken mixture with grapes, Mayo, and all but a few of the Almonds, Olives and Mandarin or Tangerine Segments.
  3. Line a serving bowl with Lettuce Leaves, arrange Chicken Salad on Top and garnish with reserved Olives, Almonds, and Orange Segments. Or line a Pita with Lettuce, spoon in the salad and sprinkle with Almonds, Orange segments and Olives.

I'm back....and posting raves - and pictures.;-)~

This was so good! First of all, I doubled the recipe. I grilled the chicken (bone-in, skinless breasts) that I had marinated for about 10 hours with olive oil, minced garlic, a healthy dose of cracked black pepper and thin lime slices from two limes.

I made half of the recipe with the listed mayo and I made the other half with Jim's alternative dressing...3 tbsp. mayo, 2 tbsp. yogurt and 1 tbsp. tahini. Oh wow! Both versions were wonderful and the mayo allowed the fruit to really shine. However, there was that oooh-la-la something about that tahini/mayo/yogurt dressing that really made me swoon. It subdues the fruit a bit, but the sesame flavor gives the salad a whole different and delicious wonder. I preferred that latter version a bit - but both will knock your socks off. Guaranteed...

Ohh, and I did add three thinly sliced serranos and some cracked black pepper to the marinating mix and I really liked that subtle layer of heat in the background. No surprise there....heh.

Excellent chicken salad. Served the salad inside of huge carved-out tomatoes and put mini croissants on the side with shredded baby spinach. The girls loved them. The olives, mandarins and almonds absolutely made it. Thanks Jim

Hi Cuz, I was finally able to log into this website. Thank you for sharing my mom's chicken salad recipe. She was a wonderful cook and very creative.
