Ingredients
  • 4 tsp olive oil
  • 1 pound red onions - cut into wedges, keeping root area intact
  • 2 tsp light brown soft sugar
  • 2 tbsp balsamic vinegar
  • 10 oz mixed salad leaves, washed and dried
  • 7 oz Gorgonzola cheese, crumbled
  • For the dressing:
  • 2 tsp honey
  • 1 tsp Dijon mustard
  • 2 tbsp red wine vinegar
  • 6 tbsp extra virgin olive oil

Directions
  1. Heat the olive oil in a large frying pan, add the onion wedges in a single layer, cover with a lid and cook over low to moderate heat for 15 min or until the onions have softened and are beginning to brown on the underside.
  2. Sprinkle the sugar over the onions, cover the pan and cook for further 10 min until the exposed side starts to caramelise.
  3. Add the balsamic vinegar and cook uncovered until most of the vinegar has evaporated and the onions are sticky.
  4. To make the dressing, put the honey, mustard, vinegar and olive oil in a bowl. Season and whisk together.
  5. Put the salad leaves in a bowl with the onions and cheese and toss to mix.
  6. Divide among six plates and then pour over the dressing.

I love simple salads...and this one sounds wonderful...all ingredients I have and love to use! Thank you, Ana, for the additions...I look forward to tryin' some new things and some of your takes on some favorites.

Another winner! Yum!

Tangy, sour, sweet - you have everything in this recipe! 5+

Okay Ana...I made this for lunch today, and it was very good. I didn't have much luck with the actual preparation as directed(my onions didn't stay together...if they had, they'd have burned :(...but that's not a problem, I just let 'em fall apart. It was surprisingly sweet...the dressing is sweet and the onions are so sweet once they are done. I hope you don't mind the photo, even without the onions intact. ;)

These are of my favorites foods. I will have this on my way out. Thank you my friend.

Very nice...^5
