  • Wonderful healthy Sauteed Chicken in a Light Mustard-Creme Sauce
  • A Fabulous Light mustard-creme sauce.
  • ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
  • 4 (6-oz.) boneless skinless chicken breasts
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbsp. olive oil
  • 1/4 cup dry white wine or chicken broth
  • 1/2 cup half n half cream (try to find the low-fat one).
  • 2 Tbsp. Dijon mustard
  • 1 tsp. chopped dried tarragon

Directions
  1. Sprinkle chicken breasts with salt and pepper.
  2. In a large skillet, heat oil over medium-high heat.
  3. Add chicken and saute until cooked through, about 10 - 12 minutes, turning once.
  4. Transfer to a plate; cover to keep warm.
  5. Pour wine or chicken broth into hot skillet; cook, stirring until reduced by half, about 1 minute.
  6. Whisk in the half n half cream, mustard and tarragon.
  7. Whisk until thickened.
  8. Pour any accumulated chicken juices into sauce.
  9. Before serving, drizzle cream sauce over chicken.
  10. Wonderful with cooked asparagus and/or rice.

Super good! I have also used the fat-free 1/2 & 1/2 in many recipes. It's very good and a great way to cut an already low-fat recipe down even more! Thanks for this I may have to make it this week!

I could find..THAT had a lot to do with me getting

What a wonderful recipe the tarragon has a liquorice quality that I like in a cream sauce.
