I make this eggplant appetizer often for parties, and it always gets gobbled up and receives compliments. If you like eggplant, you should enjoy this one.

Ingredients
  • 1 lg eggplant, thinly sliced in circles
  • 1 egg, lightly beaten
  • 1tbsp water
  • 1 cup Italian breadcrumbs
  • oil for frying
  • 3/4 cup mayo
  • 3 cloves of garlic, pressed through a garlic press
  • 1/2 tsp of salt
  • 3 medium tomatoes, chopped
  • 1/2 cup shredded cheese (like cheddar or colby)

Directions
  1. Slice the eggplant in thin circles. Salt them and let sit for 10 min.
  2. Make an egg wash by mixing the beaten egg with 1 tbsp. of water. Dip the eggplant slices in the egg wash first, then in the Italian bread crumbs on both sides.
  3. Fry on both sides in preheated oiled pan until lightly brown. You will need to keep adding oil as soon as it is absorbed by the eggplant, otherwise it could get a dark coating.
  4. Remove fried eggplant to paper towels to absorb the oil.
  5. Make the mayo spread: combine mayo with pressed garlic and 1/2 tsp of salt. Mix well.
  6. Divide the mayo spread evenly between the eggplant slices. Transfer the eggplant into a lightly oiled baking dish.
  7. Chop the tomatoes and layer over eggplant slices. Sprinkle with salt. Arrange shredded cheese over top of tomatoes.
  8. Bake in preheated 400F oven just until cheese is melted, for about 3-4 minutes.
  9. Serve warm and enjoy them melting in your mouth.

Sounds great! My husband just picked eggplant out of the garden and will make this Monday. I can't believe we are still getting eggplant, peppers and tomatoes - we have had a frost but garden is still producing. Have a great weekend!

This recipe sounds fabulous, and from all the great comments, it has to be a winner! I have saved it and will try it soon. I love eggplant but there aren't a lot of unique recipes for it, so I will try it sooner rather than later. :-)


Dear Juels,
This is very different and unique all at the same time! I grew up on zucchini, eggplant, swiss chard etc.. as my dad had a massive garden. (I miss having a big yard..but I'll have one again in the future.)
I wonder if the recipe would come out if you used low fat mayonnaise?
Have you ever done that?

Any mayo is fine! Low fat would certainly work!

Wow, these are good!!! What a great appetizer!

I could eat the whole thing all by myself! I just ate about 8 of them as soon as they came out of the oven! I really should save some for Mr Lillian! LOL!

The only thing I did different was to peel the eggplant. I ended up using about 1 cup of shredded cheese and a little more mayo. I love the garlic in the mayo...it gives the mayo a nice kick! I tried some of the slices of eggplant baked instead of fried, but it wasn't as good! I guess it just has to be fried! These really do melt in your mouth! I'll have to make these for a party...I better quadruple the recipe because these are like potato chips! You can't eat just one...or 2 or 7!!!:)

Alterations


Make them like min-pizzas by adding some sliced onion, peppers, and pepperoni?


Great idea, Chef! They'd have to be chopped really fine, so the "mini pizzas" don't collapse when you pick them up.


I always find that by first shaking the eggplant or whatever you are frying in baked flour first insures that the egg sticks better. That is especially true for wet foods like tomato! Neat recipe....


I wonder if you could use my approach to eggplant, and keep the garlic-mayo etc. Of course, they wouldn't melt and make you salivate the way these would.
