Great to have in the freezer when the weather is hot and you want something cold and frosty when you get home from work!

Ingredients
  • 1 large can pineapple juice
  • 1 can cream of coconut
  • 1 pint vodka
  • lemon-lime soda

Directions
  1. In a large container, blend together the juice, cream of coconut and vodka. Put this in a tightly covered container; freeze at least 24 hours (because of the alcohol, it never freezes firm, but you want it good and ‘slushy’ before you start using it).
  2. Before serving, stir the mixture well, as the alcohol tends to settle to the bottom, and it will be very potent there if you forget to stir first! To serve, stir it up and fill an 8 ounce glass about ½ full; add lemon-lime soda almost to the top, and stir to blend. Sip and enjoy!

OH MY GOSH!! This could be my new favorite drink - I love anything with coconut milk and/or vodka in it. Thanks for posting!

Hos did you know I like something cold and frosty when I get home from work? I'll have to give this a try!

I made this on the weekend and it is so good!! I still have a large amount frozen. What a great idea. Thanks for posting.

Oh yummy!!! I would have to wait until I got all my house work done because once I start on this I would want to drink 4 or 5 and then nothing else would get done. LOL

Can anyone tell me if cream of coconut in this recipe is the same as coconut milk used in curry dishes?
