Ingredients
  • 5 tablespoons butter (margarine will not work in this recipe)
  • 1 cup water
  • 1 teaspoon salt
  • dash of fresh ground black pepper
  • 1 cup flour
  • 1 cup grated gruyere cheese
  • 5 large eggs, at room temperature (leave out on counter 1 hour before starting recipe)

Directions
  1. In a saucepan, bring butter, water, salt and pepper to boil. When butter is melted, reduce heat to low and add flour all at once, beating with a wooden spoon. Remove pan from heat.
  2. Add cheese and beat with wooden spoon until it is well incorporated into the batter.
  3. Add 4 eggs, 1 at a time, beating each until thoroughly absorbed. When all 4 eggs are added, continue to beat until mixture is smooth, shiny and firm.
  4. Drop by small spoonfuls onto lightly buttered baking sheet (should make about 36).
  5. Beat remaining egg with ½ tablespoon of water and brush over tops of each gougere.
  6. Bake in upper 1/3 of oven, at 425 degrees, for about 20 to 25 minutes, until doubled in size, and tops and bottoms are golden. Store any leftover gougeres in the refrigerator.

Great recipe, and especially love no margarine. Butter is better.


Absolutely a favorite recipe. I add some crab meat and a some Colman's dry mustard for great appetizer puffs.
