How to make it

  • In a saucepan, bring butter, water, salt and pepper to boil. When butter is melted, reduce heat to low and add flour all at once, beating with a wooden spoon. Remove pan from heat.
  • Add cheese and beat with wooden spoon until it is well incorporated into the batter.
  • Add 4 eggs, 1 at a time, beating each until thoroughly absorbed. When all 4 eggs are added, continue to beat until mixture is smooth, shiny and firm.
  • Drop by small spoonfuls onto lightly buttered baking sheet (should make about 36).
  • Beat remaining egg with ½ tablespoon of water and brush over tops of each gougere.
  • Bake in upper 1/3 of oven, at 425 degrees, for about 20 to 25 minutes, until doubled in size, and tops and bottoms are golden. Store any leftover gougeres in the refrigerator.
