Gougeres

- 5 tablespoons butter (margarine will not work in this recipe) shopping list
- 1 cup water shopping list
- 1 teaspoon salt shopping list
- dash of fresh ground black pepper shopping list
- 1 cup flour shopping list
- 1 cup grated gruyere cheese shopping list
- 5 large eggs, at room temperature (leave out on counter 1 hour before starting recipe) shopping list
How to make it
- In a saucepan, bring butter, water, salt and pepper to boil. When butter is melted, reduce heat to low and add flour all at once, beating with a wooden spoon. Remove pan from heat.
- Add cheese and beat with wooden spoon until it is well incorporated into the batter.
- Add 4 eggs, 1 at a time, beating each until thoroughly absorbed. When all 4 eggs are added, continue to beat until mixture is smooth, shiny and firm.
- Drop by small spoonfuls onto lightly buttered baking sheet (should make about 36).
- Beat remaining egg with ½ tablespoon of water and brush over tops of each gougere.
- Bake in upper 1/3 of oven, at 425 degrees, for about 20 to 25 minutes, until doubled in size, and tops and bottoms are golden. Store any leftover gougeres in the refrigerator.

Absolutely a favorite recipe. I add some crab meat and a some Colman's dry mustard for great appetizer puffs.
