Ingredients
  • 1/2 stick butter
  • 4oz cream cheese, softened
  • 1/2 small onion, diced
  • 1/2 green pepper, diced
  • 1/2 red pepper, diced
  • 1lb cooked crawfish meat(or crab or lobster, but not canned)
  • 1/2lb(8oz block) sharp cheddar cheese, grated
  • 1/2lb cojack cheese, grated
  • 1/4-1/2 cup chicken stock
  • 1t cayenne(or more to taste...I use about 3 :)
  • dash of salt and black pepper
  • large round sourdough loaf, hollowed out(chunk these pieces for dipping), toasted*

Directions
  1. In large saucepan or dutch oven, melt butter and saute onion and pepper until just softening
  2. add cream cheese and cook on low stirring frequently, until smooth
  3. add crawfish and stock and stir to combine
  4. add shredded cheese and cook on low, stirring constantly, until cheese is melted
  5. add small amount more of stock, if needed, for desired consistency
  6. add cayenne, salt and pepper, and stir to combine
  7. Let cool slightly to thicken
  8. Pour into bread bowl and serve with toasted bread chunks.
  9. *to toast, just hollow the bread and place it and the inside chunks in 400 degree oven for 5-10 minutes until crusty

Hey keni! It just dawned on me that this is similar to a dish served at a local restaurant here but not as a dip, rather as a lunch and dinner entre. It's a similar fondue(maybe a tad thicker) served over a split and toasted sourdough roll then run under the broiler just to lightly brown the cheese. This is good news because now I don't have to wait for a party to have this!


Would this work with shrimp?

Oh...I can picture sitting in front of this and eating as if it were a bowl of soup!!! I would probably try it with the crab. Wow Keni! You can handle 3 tsp. of cayenne?!?! For me...maybe 1/2 a tsp! LOL! Great recipe!

Hi Keni...sorry I am a little late, but I had to run and do something and come back..
I made the fondue for the Super Bowl (yes it made it to the Big Game!)and got rave reviews! It was definitely a winner and will be back for repeat performances in this house! I made this a few weeks ago and the only problem i had was the craw fish got tough before the cheese melted.i am making it again tonight and adding the craw fish last.BTW this is freaking good you should all try it.
