Cilantro Grilled Chicken With Creamy Pasta Primavera Recipe

Ingredients
  • 2 lbs boneless, skinless chicken breasts
  • 1/3 cup lime juice
  • 1 small bunch cilantro, divided
  • 1/3 cup olive oil
  • 12 oz bow-tie pasta
  • 2 medium zuchinni, diced
  • 12 oz can diced tomatoes
  • 1 small bunch green onions, diced
  • 1 Tbsp minced garlic
  • 1.5 cups grated parmesean-romano cheese
  • 16 oz heavy whipping cream
  • pepper, to taste (optional)

Directions
  1. Roughly chop cilantro, setting 1/2 aside for later.
  2. Mix cilantro, lime juice, & olive oil to create marinade.
  3. Rinse chicken, pat dry, and place in flat bottom dish. (I have a Tupperware marinator I use)
  4. Pour marinade over chicken and let marinate for 1 hour.
  5. Remove chicken from marinade and cook on grill until done, turning about half way through cooking.
  6. Cook pasta until just about tender but still a bit tough. Drain.
  7. In a skillet, sautee zuchinni with a spritz of cooking oil and pepper. Add canned tomatoes, rest of chopped cilantro, and garlic. Simmer.
  8. In a separate pan, heat cream until rolling boil, stirring so not to burn to bottom.
  9. Pour heated cream into skillet with veggies and simmer on low.
  10. Add drained pasta to primavera mixture, cooking for about 5 mins. During this time, pasta will finish cooking and absorb some of the cream.
  11. Remove pasta primavera from heat and toss cheese into primavera.
  12. Plate and serve chicken with pasta primavera. Garnish primavera with diced green onions.
  13. Enjoy!
