Cilantro Grilled Chicken with Creamy Pasta Primavera

- 2 lbs boneless, skinless chicken breasts shopping list
- 1/3 cup lime juice shopping list
- 1 small bunch cilantro, divided shopping list
- 1/3 cup olive oil shopping list
- 12 oz bow-tie pasta shopping list
- 2 medium zuchinni, diced shopping list
- 12 oz can diced tomatoes shopping list
- 1 small bunch green onions, diced shopping list
- 1 Tbsp minced garlic shopping list
- 1.5 cups grated parmesean-romano cheese shopping list
- 16 oz heavy whipping cream shopping list
- pepper, to taste (optional) shopping list
How to make it
- Roughly chop cilantro, setting 1/2 aside for later.
- Mix cilantro, lime juice, & olive oil to create marinade.
- Rinse chicken, pat dry, and place in flat bottom dish. (I have a Tupperware marinator I use)
- Pour marinade over chicken and let marinate for 1 hour.
- Remove chicken from marinade and cook on grill until done, turning about half way through cooking.
- Cook pasta until just about tender but still a bit tough. Drain.
- In a skillet, sautee zuchinni with a spritz of cooking oil and pepper. Add canned tomatoes, rest of chopped cilantro, and garlic. Simmer.
- In a separate pan, heat cream until rolling boil, stirring so not to burn to bottom.
- Pour heated cream into skillet with veggies and simmer on low.
- Add drained pasta to primavera mixture, cooking for about 5 mins. During this time, pasta will finish cooking and absorb some of the cream.
- Remove pasta primavera from heat and toss cheese into primavera.
- Plate and serve chicken with pasta primavera. Garnish primavera with diced green onions.
- Enjoy!
