Ingredients

How to make it

  • Roughly chop cilantro, setting 1/2 aside for later.
  • Mix cilantro, lime juice, & olive oil to create marinade.
  • Rinse chicken, pat dry, and place in flat bottom dish. (I have a Tupperware marinator I use)
  • Pour marinade over chicken and let marinate for 1 hour.
  • Remove chicken from marinade and cook on grill until done, turning about half way through cooking.
  • Cook pasta until just about tender but still a bit tough. Drain.
  • In a skillet, sautee zuchinni with a spritz of cooking oil and pepper. Add canned tomatoes, rest of chopped cilantro, and garlic. Simmer.
  • In a separate pan, heat cream until rolling boil, stirring so not to burn to bottom.
  • Pour heated cream into skillet with veggies and simmer on low.
  • Add drained pasta to primavera mixture, cooking for about 5 mins. During this time, pasta will finish cooking and absorb some of the cream.
  • Remove pasta primavera from heat and toss cheese into primavera.
  • Plate and serve chicken with pasta primavera. Garnish primavera with diced green onions.
  • Enjoy!

    I made this for dinner several nights ago and it was very good. I did not have heavy cream or half and half so I did a bit of online research & heated a mixture of 2% milk, butter, and a bit of flour. I think it would have turned out better with the real thing. I also had to substitute the lime juice for lemon and while it was good I know that lime and cilantro have a special relationship :). We ate it for dinner two days in a row and then my beau took the remainder to work, and that's how I know it worked! The chicken was wonderful & I will definitely be trying to again or a variation of it. Thanks for sharing!
