Bacon Wrapped Roast

- 1 (21/4lb) eye of round roast shopping list
- 1Tbs fresh ground pepper shopping list
- 1tsp kosher salt shopping list
- 8oz. bacon shopping list
- 2Tbs butter shopping list
How to make it
- Preheat oven to 425
- Pat beef dry. Sprinkle with salt and pepper. Wrap with bacon strips,overlapping strips as you go. Secure with toothpick,if necessary.
- In large ovenroofskillet,melt butter over med-high heat. Sear roast in skillet for 6 to 8 mins,turning so it browns on all sides. Place roast in skillet in oven.
- Bake 55 mins or till roast registers 135 on thermometer for med-rare.Remove roast from oven and let rest for 15 mins before slicing.
