How to make it

  • Preheat oven to 425
  • Pat beef dry. Sprinkle with salt and pepper. Wrap with bacon strips,overlapping strips as you go. Secure with toothpick,if necessary.
  • In large ovenroofskillet,melt butter over med-high heat. Sear roast in skillet for 6 to 8 mins,turning so it browns on all sides. Place roast in skillet in oven.
  • Bake 55 mins or till roast registers 135 on thermometer for med-rare.Remove roast from oven and let rest for 15 mins before slicing.

    We love roast beef but eye of round never comes out excalty as I would like it too.But maybe wrapping bacon will help thank you '

    Love Bacon!! I do the same thing with a pork roast on the grill. The bacon seems to hold in the juice and flavor. I'll have to give this a try in the oven!!

    Pat... this is an amazing recipe for an eye of the round roast! I usually ask the butcher for a chunk of beef fat to rest on top of the roast while it's cooking. A little trick my mother taught me many years ago. Beef fat is hard to get now because the butchers toss it in the bin. The flavour from the bacon would be awesome and I'm giving this a try for sure. I'm also going to try it around chicken. Oh, this is making me hungry and it's 8:41 AM lol

    I made this yesterday with a prok butt, and it was wonderful!! So moist and tender, and the flavor was wonderful. As Emeril always says, "pork fat rules" LOL. Gonna try this next time I make a beef roast, as well. Anxious to try that flavor combination. It was a big hit with everyone. Thanks for sharing.

    I picked this up from the recipe swap group..it was excellent..instead of browning it in butter i browned it in bacon grease then covered. i didnt have kosher salt so i used himalayan sea salt. i also added some garlic under the bacon. Thanks Pat!

    OMG, Pat!! Now if THAT isn't just the best sounding roast!!!! I've got a huge pork butt in the freezer...(gonna have one on myself if I don't stop cooking all this stuff!!!LOL) But, I digress...I think I will try it this way...was looking for something "different" to do with it...I don't see what this wouldn't work...although, would love to try it with a beef roast, like a bacon-burger, only roast!!! LOL High 5 my friend.
