Ingredients
  • 1 - 15 oz can artichoke hearts drained and quartered
  • 3/4 cup grated parmesan cheese
  • 3/4 cup mayonnaise
  • garlic and pepper to taste
  • Herbs to taste (herbes d'Provence)
  • 4 boneless skinlless chicken breasts

Directions
  1. Preheat oven to 375 degrees
  2. In a medium bowl mix artichokes hearts, mayo, parmesan cheese seasoning
  3. Place chicken in a greased baking dish
  4. Cover evenly with the artichoke mixture
  5. Bake, uncovered for 30 minutes or until chicken is no longer pink in the center and juices run clear.

I am back to tell you that I made this and it was very good! Some mayo melted into fat by the end of baking, but that didn't effect the chicken or the taste. Added a picture for you. Thanks for a great easy and quick recipe!

I made this tonight and it was very good! I used marinated artichoke hearts so I omitted the Italian seasonings. I sprinkled it with chopped parsley for color. Other than that I made it as written. It didn't say how much garlic to use so I used 2 large cloves minced. I served this with 'Spinach Pauline' a recipe from this site and I also served it with orzo! I got these side dish ideas from Juels! These all went perfectly together! Thanks Juels, for showing me this in the 'I Made It' group! And Thanks Darlenel for posting this recipe! I hope you like my photo!:)
