The flavor is awesome! The dressing can be kept in the frig. for a while and the salad is so pretty. I use to cater a while back and this is one of the salad recipes I came up with.

Ingredients
  • Mixed Salad Greens - your choice
  • 1/3 fresh sliced mushrooms
  • 1 avocado cubed
  • 1/4 c. smoked salmon cut into small chunks
  • 1/2 c. raspberries
  • 1/2 c. drained mandarin oranges
  • Vinaigrette:
  • 1/4 c. olive oil
  • 2 T. raspberry vinegar
  • 1 T. honey
  • 1 T. water
  • 1/2 t. dried basil leaves
  • 1/8 t. garlic salt
  • Dash of coarsely ground pepper

Directions
  1. Mix salad greens with the mushrooms, avocado and smoked salmon chunks. Arrange raspberries and mandarin oranges on salad greens.
  2. Vinaigrette: Combine all ingredients (Do not add mixed salad greens) in jar with a tight-fitting lid; shake well. Serve over fresh greens.
  3. Awesome flavor!

Adding cheese to this salad only adds to the flavor...and the kind of cheese that you use is all in the taste buds of the beholder. Last time I used 1 inch cubes of creamy Havarti. I am a Havarti fan, especially dill Havarti.

This looks awesome! I actually am pretty good at smoking my own salmon, we have a smoker. I'm so excited because salmon season is almost here!!! You live in Washington also, so you know. Do you do much fishing yourself? I usually just do the cleaning and packaging and my husband does all the fishing, sometimes he takes our son- sometimes I go to, but he his an all dayer ugh.

Anyway, this is something I will be making pretty soon. Thanks for the post.

Ahhh, this makes me want to go out and do some shopping for salmong - love it! seldom am without it on the week-ends - or during the week, either. haver got the raspberry vinegar, too - so there will be no holding back to have this salad tomorrow! thank you for sharing, Shandy! you may not believe this - WE ARE HAVING SUNSHINE, finally - after winter returned with snow, ice and freezing rain for umpteen :-) weeks! have a great one!

Alterations


I didn't have the vinegar and raspberrys on hand, so I substituted red wine vinegar and blended thawed raspberrys into the dressing instead of having them whole on the salad. It was very tasty, I also added sliced roasted almonds!
