Baked potaotes Serve in pairs as a side dish for a nice lunch or as an appetizer at a party. Saw this recipe in a book. Possibly add a little jack cheese in the last 2 minutes of cooking the potatoes for a bit more flavor.

  • Potatoes
  • Olive OIl
  • Salt
  • Pepper
  • Rosemary (optional)
  • Fresh Green Beans

Directions
  1. Cut potatoes lengthwise to about ¼” slices.
  2. Drizzle about ¼ cup olive oil on a foil lined cookie sheet.
  3. Place potatoes on cookie sheet.
  4. Drizzle about ¼ cup olive oil over them.
  5. Sprinkle with salt and pepper.
  6. Sprinkle with rosemary. (if desired)
  7. Bake in 350˚ oven until potatoes are tender and starting to brown. (30 – 40 min)
  8. Meanwhile…
  9. Steam green beans until bright green and still a little crunchy (5 – 10 min)
  10. Set aside.
  11. Remove potatoes from oven.
  12. With small knife make holes on either side of the potato and one in the center at end.
  13. (chopstick will work for this)
  14. Insert the green beans in the holes to create straps for the flip flops.

It reminds me of one of my art classes(I am also a potter)
and one of my assignments was to make a favorite garment and I mad a pair of shoes that were my favs then but I like yours... I can eat them :)

This could not be more perfect. My daughter went away with her youth group to Panama City Beach FL for a week. While she was gone I redecorated her room in a beach theme.
