Another recipe kindly given to me by a friend, this time my Art School pal Fiona's mum. She baked hers in a gigantic ancient Aga stove. The Aga compartment temperature has been converted for regular stoves.

Ingredients
  • 8 oz. margarine
  • 8 oz. soft dark brown sugar
  • 8 oz. treacle
  • 8 oz. plain flour, sifted together with:
  • 1 heaped teaspoon ground ginger,
  • 1 heaped teaspoon ground mixed spice, and
  • Half a teaspoon of baking soda
  • 2 eggs, beaten
  • About 3/4 cup of boiling water

Directions
  1. Preheat the oven to Gas Mark 3 160C/325F.
  2. In a pan, melt together the margarine, sugar and treacle.
  3. Add the flour, ginger, mixed spice and baking soda. Mix all together.
  4. Add the eggs and the boiling water. Mix in.
  5. Put in a greased loaf tin lined with greased baking paper, and bake for 55 minutes.

Thanks for the farenheit directions. We yanks (at least THIS one!) don't do too well with those intricate calculations to convert centigrade. Sounds delish!


Love gingerbread, and this one sounds really good! What is treacle, if you please? I am not familiar with this word.

I love gingerbread...why is it called Black Gingerbread...do you use blackstrap molasses?


Hi conner, can I get back to you on this? I just posted an answer to your query but the site logged me out and it hasn't appeared. Suffice it to say I don't think it is blackstrap (there are apparently three different grades of molasses which I didn't know!) I will try to find out more and get back to you tomorrow!
