This is my newest way to spice up baked chicken breasts and satisfy that craving for something HOT and SPICY! SUPER MOIST! Served them with my other latest creation, Cheesy Fiesta Poblanos (posted also) OLE!!

Ingredients
  • 4 boneless skinless chicken breasts
  • Herdez's Chile de Arbol Salsa (found in grocer's Mexican section)
  • Slices of pepper jack cheese (4)
  • THAT'S IT!!!

Directions
  1. Place chicken breasts in single layer of dish (or you can use a Ziploc bag)
  2. Pour enough salsa over them to coat good.
  3. I let marinate in salsa for a couple hours, but you probably don't have to.
  4. Bake in 350 oven for approximately 30 minutes (careful not to over cook)
  5. I baked in same dish I marinated them in; if you use bag, transfer all of it to baking dish
  6. Place cheese slice on each breast last 5 minutes of cooking.

Now where is that "easy" button when I need it. This will have to be a supper sans Fred/he couldn't handle the heat, but I sure could make it for the kid and me. Yummy. Good stuff, and I love stuff made on the fly.

We had this for dinner last nigh with the stuffed poblanos. It was excellent. Plenty spicy for us. You guys do like a lot of heat! Thanks for a great post!

I made this tonight with your Cheesy Fiesta Poblanos and it was perfect together! I made this exactly as written. I used a medium heat salsa. I wasn't sure if I should season the chicken, but it didn't need it! The salsa and the cheese gave it plenty of flavor! I'll be making this regularly! I added my photo:)


It was really good although the brand of d'arbol salsa I purchased wasn't all that spicy. The cheese made it really good. I think I'M GOING TO TRY IT ON SHRIMP AND GRILL THEM. ( cap stuck)


I thought you were just SCREAMING mrgresch! LOL thanks for trying - see you should've used my Herdez - it is spicier (tehe)
