Ingredients

How to make it

  • In a large pot add oil and onion to saute
  • add in crushed tomatoes
  • add in water, 1 packet of taco seasoning, garlic salt and pepper
  • bring to a boil
  • while soup is at a slow boil make small meatballswith ground beef and the other packet of taco seasoning then slowly add the raw meatballs into the boiling soup.
  • reduce heat and cook for about 10-15 minutes
  • add in rice and stir occationally
  • serve when rice is cooked.
  • If you like your soup a little hot add some crushed red pepper flakes
  • pour soup in bowls and top with cheese.

    i just made this and it looks and smells delicious! i havent tried it yet cos im waiting for hubby to get home but i think next time i make it ill add more brown rice. by looking at it it doesnt look like i put enough, but maybe i added too much water? i think i put 7 or 8 cups. i also used ground turkey for the meatballs instead of beef and they look great! thanks so much for this recipe!

    I made this tonight and it was pretty good! The only thing I would do differently next time is to also add the taco seasoning to the chopmeat before rolling them into balls, as well as adding it to the soup. They were just a little bland for my taste. Us Italians are used to lots of seasoning in our meatballs! LOL! I also used fresh garlic instead of garlic salt and I sauteed all the veggies in the olive oil before adding the crushed tomatoes. I will definitely be trying this one again! I added my photo!

    This sounds sooo good! So we just roll the chopmeat into balls and drop it in the soup? Don't have to add anything to the chopmeat? I love this idea!!!
