All the meat was gone and toast dipped into egg yolk. Jeanne said,not into eggs. Gis answe was,amI that obvious. He felt funny ordering just bacon and sausage.

    you guys mentioned yesterday missing pressure cookers and was it an ice cream maker or a breadmaker? Jim and I used to own a nice little dome tent....can,t find it! Been looking for four years. How do you lose atent??

    We're about to head down for breakfast. Then go shopping for a few hours and then home. Making a Jamie Oliver Steak Sarnie recipe for Jim and I this evening and Grilled Tofu for Benjamin......broccoli casserole on the side and maybe a potato?

    Hope you're getting those pressure assisted flush toilets. They're the cat's meow as far as getting everything flushed the first time. Yeah, they cost, but IMHO are worth it. All the toilets these days are the water-saver type but if you have to flush 3 to 4 times to get it all down you are using more water than the old style. Don't buy those electronically controlled toilets. You can't flush during a power outage.
    Bowl size and throat size are important too. Hope you did your due diligence.
    Don't forget to look at the ADA (Americans with Disabilities Act) toilets. They seat you up a little higher so it's easier getting up and down.

    Pat, I want to get new flushers here too. Ours are ancient and one is so rocky, it is an adventure to sit on it. Talk about Mr. Toad's wild ride. LOL

    Funny story about the guy with the eggs. Fred eats TWO senior breakfasts at a time when we go to Bob Evans.

    Serving up the white chicken chili for game time. Toppers are sour cream, shredded cheese, pickled jalapenos. Making a batch of spoonbread.

    Laurie, I don't like mashed cauliflower too much, mine is always watery. I do see the chefs make that "silken cauliflower puree" I think they must use the food mill to get it so smooth. Sorry can't help much.

    I have trouble with mashed cauliflower being watery too, Tina - but my guys really love it, so I have a three step process to help with that.
    Laurie, I steam the cauliflower in a little water until it is tender when I poke it with a fork or sharp knife. Then I drain it in a colander and throw it back into the hot pot to evaporate some of the water. Then I add whatever I'm going to add (a little butter, some cheese, etc.) and mash it up with a potato masher. If it still looks like it has some water floating around, I'll put the lid back on the pot, crack it very slightly and turn it upside down over the sink to get that bit of liquid out. Works every time - we love it. I've done cauliflower puree in the Cuisinart before, but it didn't have enough texture for us - so I stick with mashing. Hope you try it!

    Well, I'm finally going to dig up the garden today, so I'd better get going. Maybe while I'm doing that, an idea for dinner will pop into my head...

    Fred is content to sit in his chair all day. He doesn't do much more than that any more. a) he falls outside, he isn't steady on his feet, b) he tends to break things when he tries to use them, he has killed the microwave, the washer, the vaccum, the disposal, and he took apart a dryer and couldn't get it back together, so he doesn't try anymore.c) he expects to be waited on hand and foot, he cheerfully admits he likes lots and lots of sympathy. He wasn't the center of attention at the park.....there were lots of old folks sitting in the park and he didn't stand out. He has changed drastically, the doctors tell me that part of the brain that affects motivation has been greatly damaged. Sometime he exhibitis some paranoia, accuses me of poisoining him by giving him the wrong pills, or if the food is too spicy. As long as he has the remote and fresh batteries for it, he is fine. He has only vanished three times in the last year, walking out of the house for a stroll and not telling me. I've had neighbors, my step dad and sister bring him home. He says he will stay put when I leave for work, but a part of me is afraid and I call to check on him at break and at lunch.

    I try to do the investment cooking once a month, alternating ground beef one month and chicken poaching the next...If I have the meat prepped ahead, it saves me a bunch of time trying to feed him quickly when I get home. After the microwave debacle, he eats sandwiches and won't heat any of the plates I fix for him. He is usually starving and hanging over my shoulder telling me to "hurry up" From 6:00 p.m to 6;30 is race time, on how quickly can I get the food on the table. We have to have dinner done before he watches Wheel of Fortune and Jeopardy. I think he loses his hearing when he chews or something, because we have to be quiet during his "shows". All well and good, because that's when I wash the dishes and fix lunches for the next day.

    I saw some dual flush toilets at Sam's and I wondered if they would be efficient. We have an ADA version in our master bath. We had it put in when we remodeled the bath for Tyler's special needs. I hate it, Fred loves it. Go figure.

Then hopped up and made a batch of Spiced Fresh Banana Butter because those bananas were as over ripe as they get before becoming refuse. Having a late breakfast of Spiced Fresh Banana Butter and Greek Yogurt while I hang out with you guys. And a little Irish in the coffee just because.

    Just made up a fresh batch of Hiccup Slaw . Now I have a bunch of red cabbage left so next is Braised Red Cabbage With Cranberries . Wasn't planning on that today but its not like it doesn't keep.

    That is a plus with the pickled cabbages. Long refridgerator time. I've been wondering if I can freeze the Hiccup Slaw because it makes such a lot. Any thoughts on that?

    I had already pulled out a pound of shrimp to boil. I was going to get around to the Shrimp And Spaghetti Squash that I delayed. I suppose at some point I'll get tired of hanging out in the kitchen.

    You know you are getting old when a small thing like new toilet seats puts a smile on your face. I'm getting old and understand that smile completely :)

    Tina, that chili sounds very good! I have been known to order 2 breakfasts from time to time if I can't decide between savory & sweet.. my beau always looks at me with wide eyes but doesn't say a word. haha! Sounds tough what you and your husband deal with daily and you are such a strong woman, an inspiration!

    Brooke, I knew you'd have good tips for the mashed cauliflower. My first time having it was in your shepherd's pie (with potato too of course) and I loved it! Will try on its own sometime. Curious to see what you decide to bake - still on that kick over here - as well as what pops in your head for dinner.

    I think we'll go see that movie Due Date today for a matinee if I can get my beau out of bed.. he seems to have had a bit too much fun last night (and by fun I mean alcohol haha!) which is rare for him and I've certainly been there (heck, you all have heard about it) so I feel for him.. but I want to go somewhere! Later today the new concierge service/convenience store opening up in our condo lobby is hosting a wine tasting w/ appetizers. I'm looking forward to it and my sister and a couple friends might join us. I wonder if he'll be up to tasting wines.. For dinner I planned to make something with chicken but the pieces I pulled out of the freezer don't seem thawed yet, might have to push that to another day.

I really didn't want red cabbage just now. It is best when with a big beef roast which I don't have. I finished shredding the cabbage and put it into my seal-o-meal and we'll address that issue later in the week when I have a nice roast.

Eating out 1 night because it's Phils birthday. Just have to worry about a breakfast or brunch,Fri. night dinner and they will have to be at the airport by 7am on Sun so something for their stomachs on Sun morning.     Pat, for breakfast/brunch I think you could make Quiche and easily leave out the flour or sub it with rice/potato flour or cornstarch (which I think people with celiac can eat). I've never made my own chicken stock but I think it involves the word carcass? pass for now..

    Cheaters Biscotti, my favorite short cut recipe.
    1 box dry cake mix (your choice of flavor)
    1 cup all purpose flour
    2 large eggs
    1 stick melted butter
    2 teaspoons vanilla (or your preferred flavor)
    ¾ cup chopped nuts or chocolate pieces (if desired)

    Preheat the oven to 350F degrees. Pour your cake mix and flour into the bowl of a stand mixer. Add the eggs, butter and vanilla. Mix on medium speed for 2 to 3 minutes. Mix in nuts or chocolate if desired. This dough will be very stiff but will not stick to the bowl when properly mixed. The consistency will be like children’s play dough. Divide dough into two halves. Roll each half into a log, and place on a lined 11” x 15” x 1” baking pan. Gently press the top of the cookie log into a rectangle, about 3 inches wide. Repeat with the second half of the dough. Bake for 20 to 25 minutes. Remove cookie pan from the oven and let cool for 10 minutes. Do not turn the oven off. Remove cookies from baking pan and cut into 1 inch piece logs. You will be cutting this on the width. Place cookies on their cut side on the lined baking pan. Place pan back into the oven and bake for 10 minutes. Remove cookies to cooling rack to cool completely. Store cooled cookies in an airtight container.

    *Variations:
    Devils Food Cake mix with pistachio nut
    Spice Cake mix with raisins and rum extract instead of vanilla
    Chocolate Fudge Cake mix with macadamia nuts-a tsp of instant coffee
    Lemon with slivered almonds with extra lemon zest
    Yellow cake mix with sliced almonds and dried cherries (almond extract)
    Butter Pecan Cake mix with brickle bits and/or nuts
    Cinnamon Swirl Cake mix with pecans and/or cinnamon chips
    Yellow Cake mix with dried cranberries and pistachio nuts
    Orange cake mix with orange zest, toasted pecans, brown the butter til toasty before adding to mix.

    *2nd Variation:
    You can dip or drizzle these cookies when completely cooled in melted chocolate or bark coating

    You have a lot on your plate Tina and I admire your attitude and how you take it on. My Mom had a stroke 20 years ago. Not nearly as debilitating as Fred's but freaking nasty just the same. She has improved over the years and jokes that by the time she improves mostly from her stroke, her senility will take over. I live hours and hours away and only see her once or twice a year. But she lives in a teeny town with loads of my relatives and everyone watches over her. If she forgets her purse in the Grocery store, the neighbour next in line will grab it and bring it home for her or when her old car wasn't road worthy anymore the local police pulled her over and told her not to drive it anymore and to take it off the road. There was a glitch in someone's paperwork after she had the stroke because the Doctor's are required by law to advise the Driver's Bureau to take away the patient's license and have them retest when and if they are able to and no one handed in Mom's paperwork so she's never lost her license. She didn't drive for the first few years right after the stroke but my Dad got her back in the saddle so to speak. And she's good in that she does know her limits and she won't drive out of town anymore. She's in a good place for her. But I lost my Mom 20 years ago and the same lady isn't there anymore and I miss her. She got a nasty edge to her after the stroke that she never had before and her personality changed. I love her to bits and I thank God I didn't lose her because we sure could of, but I miss my old Mom. All the power to you. (Plus you rock with the Biscotti recipe! WOW)
    So...as you can guess....I'm home! Really did have a lovely time. Jim got tons of clothes. You guys have waaayyyyyy better prices than we do! We spent about $270 on clothes and fully expected to have to pay duty but they just waved us through. A pair of Dockers chinos which we'd pay $90 for here in Ottawa Jim got for $30. Crazy. And Laurie.....I WENT TO PANERA'S FOR LUNCH! I was so excited! We'd gone to a Bed, Bath and Beyond and across the parking lot there was a Panera Bread and it was close to lunch time so I start telling Jim and Benjamin how Laurie won Free Bread for a year from Panera's and they're looking at me like I'm from another planet. LOLOL! What a nice place. Had a lovely bowl of soup and an awesome sandwich. That's a great place. I'd love to win bread from there. Is it every week or every month you get a free loaf I forget? And I also saw a Bob Evans on the strip. Never heard of that either until this morning when you mentioned it Tina. I was like I was on ODD's home turf. It was fun!
    Oh, by the way...watched a great Robert Duvall, Bill Murray movie last night called "Go Low". If you get a chance to see it, do. It was excellent. I cried buckets.
    Laura....your morning sounded the best! Watching French movie in bed with subtitles. I love it! And a little Irish in the coffee. TToooooo much fun! Ha-ha! That Braised Cabbage sounds very, very good. Bookmarked that.
    No Dahlia, I don't have the Steak Sarnie posted. If it turns out nicely and I have the energy to take a picture I will. The wine tasting sounds like a blast. We made a little trip to the Liquor Store last night and of course U.S. Liquor stores carry a vastly different selection than Canadian liquor stores. I bought a lovely Chardonnay called "Three Blind Moose" from California I think. It had an adorable label. LOL.
    Corn Chowder sounds heavenly Points.

    Is this this next weekend you have your company coming Pat? Sounds like fun. Can you ask Jeanne if she'd come to my house tomorrow and make me Pumpkin Pancakes and sausages please! Frittata and fresh fruit sounds lovely. Fancy yet do-able.

    Jeanne doesn't do that often but when she does,it is nice. All the fixins ready for tacos when girl child gets home.

    Never heard of the Ravelry. I'll have to look it up. Ang, I'm starting a baby blanket next. Been making skull caps for a friend who just went through chemo. And I've added a few berets in the mix. She likes them, she feels dressed up. I've been raiding sparkly buttons off old Holiday cardigans and sewing them on to the caps so she can feel "special" that day. I'm just happy to make her smile. The baby blanket is for the boyfriend's new niece. Although he is on very thin ice and I might just save it for someone else's baby down the road. When will young men realize that possessive jealousy is not attractive? And telling someone that they can't follow their dreams because THEY don't like them is just insulting.

    Janet, the personality change is the hardest to deal with....He is not the man I married and I'm just treading water. At the moment he despises me, and considers me his jailor. He wanted to drink yesterday and with the seizure meds, drinking any more than an ocassional beer is tantamount to suicide. So he has barricaded himself in the bedroom and snarls at me. This too shall pass.

    Yeah on the sales Laurie, sorry your girl is having a rough day. Believe me, I feel for her. I'm paying the price for my indulgences the past two days.

    Mrs. T's has saved my sorry butt many a night when I need a starch for the resident critic. A meal isn't a meal unless it has a meat and three. LOL We should start a fan club.

    Oh, Panera is yummy, it has been so long since I've gone.
    Well, I'm definitely out of the running in the football pool
    I wish I had the energy to bath our dogs tonight, they need it....but Charlie is too much to handle by myself and Fred is in no mood to assist. I need to take Charlie to the car wash these days. He is so big.

    Points, I make some of the biscotti, once baked for Liv. She likes hers soft too. I dip mine in coffee, so it softens enough for me, but give it a try you might like it.
