Here is another from the Murphy family reunion cook book. My Aunt shared this one. OMG this is to die for!

Ingredients
  • 1 pkg. yellow cake mix
  • 4 eggs
  • 1/2 cup oil
  • 1/2 cup chopped pecans
  • 1 (3.4 ounce) instant vanilla pudding mix
  • 1/4 cup water
  • 3/4 cup irish cream liqueur
  • 1/2 cup shredded coconut
  • Glaze ingredients:
  • 1/2 cup butter
  • 1 cup white sugar
  • 1/4 cup water
  • 1/4 cup Irish Cream Liqueur

Directions
  1. Preheat oven to 325*
  2. Grease and flour 10-inch bundt pan.
  3. Sprinkle nuts and coconut evenly over bottom of pan.
  4. Combine cake mix and pudding mix.
  5. Mix eggs, oil, water, and Irish Cream
  6. Beat for 5 minutes at high speed.
  7. Pour over nuts in pan.
  8. Bake for 1 hour.
  9. Cool for 10 minutes while you make the glaze.
  10. Combine butter, water and sugar in a small saucepan.
  11. Bring to a boil and continue boiling for 5 minutes, stirring constantly with a whisk.
  12. Remove from heat and whisk in 1/4 cup Irish Cream.
  13. Invert cake onto serving plate.
  14. Prick top and sides of cake.
  15. Spoon glaze over the top and brush sides of cake, until the glaze is absorbed.

Ooh, this sounds exactly like a rum cake my family always makes around the holidays. Just substitute Meyer's Dark Rum for the Irish creme, mix the nuts into the batter, and omit the coconut and you've got practically the same (delectable!) cake. I might try this one this year to mix things up a bit.

When it comes to pricking the cake, I'm not shy about how the cake will look afterward -- I use a chopstick! The more deliciousness the cake can absorb the better....

Sounds delicious but I'm not a coconut person so I would take that out....I've tried recipes with coconut in it and just can't eat it....lol

I'm not Irish, but OH BOY does this look good. This is the second recipe today on 2 different sites that I've come across using Irish Cream. That must be a sign or something. Need to get some Irish Cream, now!


Very yummy. I made it this morning. I substituted almonds for the pecans due to my husband's pecan allergy. It's excellent with almonds. I am sure it's excellent as written as well.


I'm a Murphy niece and almost married a Murphy! This looks great, will try soon.
