How to make it

  • Set up three shallow bowls. In first bowl,put buttermilk infused with cracked pepper. In second,flour. In third bowl,mayonnaise. In a bag ,add panko crumbs mixed with parsley,cheese and cayenne.
  • Begin by soaking chicken rtenders in buttermilk-pepper mixture for up to 6 hours. Remove from mixture,add to the flour for a light coating. Roll each tender in mayonnaise or use a brush to coat each piece. Toss the tenders in a bag with panko mixture and shake until coated.
  • Lay on a baking tray and bake in 400 degree oven for 12-15 mins. until cooked thru. Enjoy!

    Pat, this sounds absolutely fabulous! I love chicken soaked in buttermilk; and I love it coated in mayo and breadcrumbs...who'd'vethunk about doing all of them together?? WOOOOHOOO!     Back in to report on this:

    WOW!! As usual, LeClare supplies us with another great chicken dish. I just happened to have everything on hand these called for, so I had these tonight for dinner, along with Sparow64's "favorite garlicky-cheesey potatoes." They complimented each other very well!

    This chicken is tender due to the soaking in buttermilk for 6 hours today before baking. Ease of prep is an added bonus. I placed my mayo on a flat plate and stirred it well before running the tenders through it. Since they lost a bit of pepper during this step, I sprinkled a bit more on. Also---I only had about 3/4 of the panko crumbs, but plenty of dried crumbs----so I did use about 1/4 of dried bread crumbs in the mix.

    These came out crunchy, tender and very flavorful. Not particularly "dark golden brown" as we're used to----but that is inherent in Panko---they don't brown as well as some types of breadings. It stayed a lighter color--no matter--it was still delish and going on the regular keepers menu!
