The first time I did the pork chops I put them on a baking rack on top of the baking sheet b/c I thought that might help them get crispy all over. They were crispy in most spots but mostly on the edges (top and bottom & sides) so I tried parchment paper lined sheet last night and the bottom didn't crisp at all.. I've had this issue before when making oven-baked/fried type things so I think I'll just need to turn my temperature up a bit more, perhaps it's my oven. But, I would suggest the baking rack method and even a shorter cook time (of course if you have a meat thermometer that helps), and a bit of a raise in temp. Just my experience. Also, used chicken stock in place of the wine b/c I didn't have any (gasp!) Made this twice within one weeks time so that should tell you how much we like them :)

This is a perfect recipe! We loved this! The only thing I did differently is that I baked the chops on a baking cooling rack b/c I thought it would help them with crisping but I should have done it as you specified and will next time. Still, just awesome in taste & texture. Thanks!!

This was delicious!! Loved the combination of the mustard and the taste of the liquid smoke along with the crunchy panko! Made it exactly as posted. Added my picture, too.
