How to make it

  • Preheat BBQ to medium high.
  • Cut the pepper in half and carefully remove the seeds and ribs.
  • Sauté the onions and the mushrooms in the olive oil and add the Chicken rub spice when almost done. Add the fresh thyme.
  • Grill the peppers, turning twice, until they just start to get soft, about 10 minutes.
  • Place half of the mushroom, onion mixture in each pepper half. Crack an egg into each pepper and sprinkle with pepper.
  • Close the lid of the grill and cook until the egg sets. Add grated cheese on top until melted.
  • Serve and enjoy!
