How to make it

  • Melt butter in baking sheet with sides or similar pan while preheating over to 400. When melted, remove from oven to cool slightly.(you want the butter to still be melted, but don't want the pan so hot it cooks the shrimp as soon as they touch it!
  • Toss shrimp with cornstarch and set aside
  • In shallow glass dish(I used a pie plate), beat eggs well. Add hot sauce and Dijon. Set aside.
  • In large zipper bag, combine Panko, dill, chives, Old Bay, cayenne and salt and pepper. Mix well.
  • Drop shrimp into pie plate and coat with egg mixture
  • Drop, one at a time into the bag of Panko mixture until all are in.
  • Shake well to coat.
  • Remove each piece of shrimp to baking pan until all are out o Panko mix.
  • Increase oven temp to 425 and bake about 10 minutes until shrimp are pink and curling. Do not over cook!
  • Serve immediately with lemon wedges.

    Yummy little things! I had one pound of shrimp so I halved everything but the butter for the pan. I had a bit over 1/2 cup of panko and ran out so I had to finish up the cup with plain old breadcrumbs. Used dried chives, dried dill and horseradish mustard instead of dijon. I'm gonna nibble on these for the rest of the day! I put this in a new thread in IMI for Keni Cooking Day. 1/25/15

    These are so delicious! I didn't really measure the dill but I think I put the full amount though I halved the rest of the recipe. Anyway, YUM!!! Thanks for another great one.
