Marie's Potato Salad

- 2 lbs red potatoes, with skin, cubed, scrubbed well shopping list
- red wine vinegar (just a few splashes) shopping list
- 1 dill pickle, diced shopping list
- 3-4 green onions, sliced shopping list
- 1/2 small red onion, diced shopping list
- 2-3 hard boiled eggs, chopped shopping list
- 1/2 cup mayo (approximate, use what is needed) shopping list
- 1 tsp dried dill shopping list
- pickle juice shopping list
- paprika shopping list
- salt & fresh ground pepper shopping list
How to make it
- Boil cubed potatoes until just tender, drain, rinse with some cold water to stop the cooking process, drain again. Return to pot, add a few splashes of red wine vinegar, mix.
- Add the pickle, green onions, red onion, hard boiled eggs, mayo, dill, and a splash or two of pickle juice. Mix, then add salt & pepper to taste, mix well. Top with paprika, serve. Enjoy!
- NOTE: I sometimes add a little mustard as well!!!

Oh my goodness! This sounds delicious and you had me on the 'dill pickle'! Yummy looking picture. Those red-skinned potatoes really add some colour! Bookmarked to try very soon! Nice post Marie!

I always soak my potatoes with vinegar while they are still hot!! absolutely gives the potato salad the best flavor...Two thumbs up, way up.
