Ingredients

How to make it

  • Boil cubed potatoes until just tender, drain, rinse with some cold water to stop the cooking process, drain again. Return to pot, add a few splashes of red wine vinegar, mix.
  • Add the pickle, green onions, red onion, hard boiled eggs, mayo, dill, and a splash or two of pickle juice. Mix, then add salt & pepper to taste, mix well. Top with paprika, serve. Enjoy!
  • NOTE: I sometimes add a little mustard as well!!!

    This has earned its place in my regular 'summer' recipe rotation. Just so good and just that something a little bit different from my normal old potato salad. Added my pic this time. :) Great recipe Marie!

    Yummy! I made this a few weeks ago and really enjoyed it! I did change a few things around, based on what I had on hand..used Yukon gold potatoes, left out the eggs, didn't have red or green onion so added in some chopped chives. The results weren't as colorful asa yours but Mmm mmm good!

    Made this for dinner last night and fell in love! This was a FABULOUS recipe. I'd never had a potato salad with dill pickle in it before. The only change I did was used fresh dill (about 2 tbsp. finely minced) instead of dried. Will totally be adding this to my regular rotation. AWESOME post Marie! Top shelf! Added my two cents to the

    Glad to see you are able to upload recipes again! That P-Salad looks very close to mine ... luv those dills and dill weed ... never make the salad without 'em! Best Foods Mayonnaise is a must ... do you think?
