How to make it

  • Baking the cake mix in a 13x9 inch pan according to the manufacturer's directions.
  • Once the cake has completely baking, remove the cake from the oven. Take a fork and quickly and gently punch holes over the entire surface of the HOT cake, trying not to break the cake into pieces.
  • Shake up the can of coconut milk and open, pouring the coconut milk directly over the surface fo the cake, letting the coconut milk seep into the hot cake.
  • Cover the cake with aluminum foil and refrigerate until it is cold to the touch. Remove foil and cover with Cool Whip and sprinkle with coconut. Serve!
  • If you like a sweeter cake, you can actually add a can of sweetened condensed milk over the hot cake before adding the coconut milk.
  • I found a recipe for this addition years ago on Eaglebrand.com.
  • I add white chocolate slivers to the top at times and have even toasted the coconut first. The packages coconut is great without being toasted as its adds a fresher flavor to the cake and sweetness, too! Aloooohaaaa! (Thank you Don Ho!)

    Cream of coconut is thicker than the canned coconut milk and would work well for this recipe. Its thick, creamy and would add moisture and flavor to the cake without making the cake "wet." The cake comes out very moist with a lovely coconut flavor. I hope you'll try it!

    I am glad, I finally found an easy coconut cake recipe. This is my 1st time cooking a Thanksgiving dinner in 14 years.We usually go to family houses, Or just have ate out. Wish me Good Luck. LOL.

    How simple - and sounds very moist and full of coconut flavor...I bet the toasted coconut would be great, too. This will be a must try!

    Love the coconut milk, and actually, for white cake, I don't think you can beat Duncan Hines Classic White Cake mix!! I make almost all my cakes from scratch, but I love DH Classic White mix! and I use it with a coconut sour cream cake recipe. :)

    Simple recipes are sometimes the best. I know that these hole cakes aren't always the greatest but they sure are moist. This one sounds really good and I will keep it and try it tomorrow. Yeah, men cook too!
