Ingredients
  • 2 lbs. ground beef
  • 1 or 2 cans of beer
  • 2 tbsp cocoa powder (I used Hershey's)
  • Cajun rub (any cajun mix will do)
  • Worchestershire
  • Seasoning salt (Lawrey's)
  • Dill Weed
  • Chipotle Tabasaco
  • Garlic (however much you want - I use at least six cloves)
  • Paprika
  • Chile powder
  • 1 large onion, diced
  • 2 cans Kidney beans
  • 1 can black beans
  • 1 can pinto beans (or other white bean - White Northern works, too)
  • 2 big cans tomato sauce
  • 2 cans diced tomatoes with garlic

Directions
  1. Brown onion and garlic, then add beef
  2. Add can of beer to beef, cans of beans, cans of tomato sauce and diced tomatoes. Season to taste with the rest of the ingredients.
  3. Simmer for 2+ hours, adding beer as necessary to "cook down".
  4. I originally had a 16oz can of beer and put about 3/4 of the can in. I added the rest of the can to let the chili cook down.

  6. Mel's notes: I have made this many MANY times since Feb. 2004. I always do everything " to taste", except for what I have noted. It's still the best chili I've ever made.

For those of you who do not use alcohol, non-alcoholic beer is always an option. It is the flavor of the hops that adds a further dimension to this recipe. However, alcohol evaporates during cooking, so even if you used the real thing, there would be nothing left of the alcohol even if you used real beer.


This looks really good and you have a handful of heaven in your hands in the pic. This recipe was some endeavor. Going to attempt it.

Wow, this looks really good! Of course, adding beer to me is a must and also the unsweetened cocoa! So often chili is either too bland. I'm gonna try this soon. Thanks!
