Best Chili I Ever Made

- 2 lbs. ground beef shopping list
- 1 or 2 cans of beer shopping list
- 2 tbsp cocoa powder (I used Hershey's) shopping list
- Cajun rub (any cajun mix will do) shopping list
- Worchestershire shopping list
- seasoning salt (Lawrey's) shopping list
- dill weed shopping list
- Chipotle Tabasaco shopping list
- garlic (however much you want - I use at least six cloves) shopping list
- paprika shopping list
- Chile powder shopping list
- 1 large onion, diced shopping list
- 2 cans Kidney beans shopping list
- 1 can black beans shopping list
- 1 can pinto beans (or other white bean - White Northern works, too) shopping list
- 2 big cans tomato sauce shopping list
- 2 cans diced tomatoes with garlic shopping list
How to make it
- Brown onion and garlic, then add beef
- Add can of beer to beef, cans of beans, cans of tomato sauce and diced tomatoes. Season to taste with the rest of the ingredients.
- Simmer for 2+ hours, adding beer as necessary to "cook down".
- I originally had a 16oz can of beer and put about 3/4 of the can in. I added the rest of the can to let the chili cook down.

- Mel's notes: I have made this many MANY times since Feb. 2004. I always do everything " to taste", except for what I have noted. It's still the best chili I've ever made.

Pretty good chili! A little beef broth will help take away some of the strong tomato flavor if that bothers you :) Cornbread would go great with this! More in the IMI -------------> more
