Sauteed Light Chicken Scampi

- 1/4 cup extra virgin olive oil shopping list
- 6 tbsp butter shopping list
- 2 tbsp chopped garlic shopping list
- 1 cup white wine shopping list
- 1/2 tbsp garlic powder shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp fresh ground pepper shopping list
- 2 tbsp lemon juice shopping list
- 1.5 lb boneless, skinless chicken, cut into 1 inch cubes shopping list
- 2 tbsp capers (optional) shopping list
- 1 lb linguine shopping list
How to make it
- Cook linguine according to instructions, set aside. In a skillet saute garlic, olive oil and 3 tbsp of butter over medium heat, until garlic is tender- about 5 minutes.
- Add wine, chicken, salt, pepper, garlic powder, and lemon juice and capers to pan, and cook on medium/high heat for 7-10 minutes, or until juices run clear from the chicken.
- Pour over the linguine and serve immediately.
- Recently I purchased a George Forman grill and I have made the chicken on it and simply sliced and added it to the pasta and sauce at the end. It is really good this way too- but you must marinade the meat overnight in 2-3 tbsp balsamic vinegar, Italian spices of your choice, and 2 tbsp olive oil. I used Mrs Dash garlic +herb for the marinade. If you are making it this way, do everything the same but add the chicken in the pan at the end with the linguine and sauce. YUM!
- *optional- Add more lemon for an extra zesty summer flavor or use less wine for a richer sauce.
