How to make it

  • Cook linguine according to instructions, set aside. In a skillet saute garlic, olive oil and 3 tbsp of butter over medium heat, until garlic is tender- about 5 minutes.
  • Add wine, chicken, salt, pepper, garlic powder, and lemon juice and capers to pan, and cook on medium/high heat for 7-10 minutes, or until juices run clear from the chicken.
  • Pour over the linguine and serve immediately.
  • Recently I purchased a George Forman grill and I have made the chicken on it and simply sliced and added it to the pasta and sauce at the end. It is really good this way too- but you must marinade the meat overnight in 2-3 tbsp balsamic vinegar, Italian spices of your choice, and 2 tbsp olive oil. I used Mrs Dash garlic +herb for the marinade. If you are making it this way, do everything the same but add the chicken in the pan at the end with the linguine and sauce. YUM!
  • *optional- Add more lemon for an extra zesty summer flavor or use less wine for a richer sauce.

    We did like it, but we both did add a little bit of Tony Chachere's(a cajun must have) to it! the ingredients of tony's are salt, red pepper, black pepper, chili powder, garlic. Really made a big difference a just added a nice flavor.
