Sauteed Light Chicken Scampi Recipe
This is my California-style scampi sauce: white wine, garlic, butter and E.V.O.O. with chicken. This recipe is delicious and easy- not as sinful as other more buttery sauces, but just as satisfying...I promise!!!

  • 1/4 cup extra virgin olive oil
  • 6 tbsp butter
  • 2 tbsp chopped garlic
  • 1 cup white wine
  • 1/2 tbsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp fresh ground pepper
  • 2 tbsp lemon juice
  • 1.5 lb boneless, skinless chicken, cut into 1 inch cubes
  • 2 tbsp capers (optional)
  • 1 lb linguine

Directions
  1. Cook linguine according to instructions, set aside. In a skillet saute garlic, olive oil and 3 tbsp of butter over medium heat, until garlic is tender- about 5 minutes.
  2. Add wine, chicken, salt, pepper, garlic powder, and lemon juice and capers to pan, and cook on medium/high heat for 7-10 minutes, or until juices run clear from the chicken.
  3. Pour over the linguine and serve immediately.
  4. Recently I purchased a George Forman grill and I have made the chicken on it and simply sliced and added it to the pasta and sauce at the end. It is really good this way too- but you must marinade the meat overnight in 2-3 tbsp balsamic vinegar, Italian spices of your choice, and 2 tbsp olive oil. I used Mrs Dash garlic +herb for the marinade. If you are making it this way, do everything the same but add the chicken in the pan at the end with the linguine and sauce. YUM!
  5. *optional- Add more lemon for an extra zesty summer flavor or use less wine for a richer sauce.
