Grandmas Cornbread With Honey Butter

- 10" cast iron skillet shopping list
- Non stick cooking spray shopping list
- flour to powder skillet. shopping list
- honey BUTTER: shopping list
- 1/4 cup butter, softened but not liquid. shopping list
- 1/4 cup honey shopping list
- corn BREAD: shopping list
- 1-1/2 cups white corn meal (yellow works also) shopping list
- 3 tablespoons flour shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon baking soda shopping list
- 2 cups buttermilk shopping list
- 1 egg, beaten shopping list
- 2 tablespoons bacon drippings, melted shopping list
How to make it
- In advance, thoroughly mix honey and butter together and refrigerate.
- Spray skillet with non stick cooking spray and powder with flour.
- Place skillet in cold oven on center rack.
- Preheat oven and skillet to 450F.
- Mix together dry ingredients.
- Fold in buttermilk, egg, and drippings just until dry ingredients are moistened.
- CAREFULLY pour into hot skillet, bake 25 minutes @ 450F until golden.
- Place clean kitchen towel folded into approximately 12" square on cutting board or counter, when cornbread is finished cooking, remove skillet from oven and tap inverted onto towel to dislodge cornbread loaf.
- As soon as you can stand the heat, slice into pie shaped wedges, split, and slather on the honey butter and serve hot.
- Eat it all and tell everyone else the dog ate it, or it fell on the floor, or you burned it. Juuuust Kidding! Share you big silly!

This is almost exactly how I make my corn bread, minus the butter and the bacon fat. I have always used honey to sweeten and an olive oil for the fat.

Dear, I won blue ribbons for cornbread at the tender age of 10. This looks absolutely awesome. My secret was bacon grease in the smoking hot skillet to give us that extra crispy edge. Now, I'm hungry. Toodles.
