Ingredients

How to make it

  • In advance, thoroughly mix honey and butter together and refrigerate.
  • Spray skillet with non stick cooking spray and powder with flour.
  • Place skillet in cold oven on center rack.
  • Preheat oven and skillet to 450F.
  • Mix together dry ingredients.
  • Fold in buttermilk, egg, and drippings just until dry ingredients are moistened.
  • CAREFULLY pour into hot skillet, bake 25 minutes @ 450F until golden.
  • Place clean kitchen towel folded into approximately 12" square on cutting board or counter, when cornbread is finished cooking, remove skillet from oven and tap inverted onto towel to dislodge cornbread loaf.
  • As soon as you can stand the heat, slice into pie shaped wedges, split, and slather on the honey butter and serve hot.
  • Eat it all and tell everyone else the dog ate it, or it fell on the floor, or you burned it. Juuuust Kidding! Share you big silly!

    I made this tonight...and it rocked! My grandmother made this often with her homemade chili and elk stews! I am using "honey powder" now in the mix and then I drizzle honey over the top of my cornbread right before it goes into the oven..Gotta love cast iron...Great post!

    I just made some skiiet corn bread the other night to go with my gumbo but without the honey. I think I would like it with a touch of sweetness. Nice post.

    OMG! This looks just like my Grandma's Johnny Cake that she would make when I was little. Except for the honey butter - which looks delicious too - we had it with real maple syrup. It's been so hard to find a recipe that is just right! So many recipes have corn in them, or are fried not in the oven, which is wrong wrong wrong... this looks like it could be it!

    I love cornbread! Savin this recipe!

    I love it unsweetened and I love it so sweet that it comes out more like a cake. I eat it both ways - couldn't imagine ever turning it down.

    Whew Weeee! .... and a slab of of cold salted butter on a hot piece of cornbread.... Mmm... Mmm... Mmm...

    Thanks for your critique, you hit the nail directly on the head. A little pork fat and the extra crispy crust brings it all together. No honey butter for the unsweetened fans, honey butter for the sweetened fans.

    Dear, I won blue ribbons for cornbread at the tender age of 10. This looks absolutely awesome. My secret was bacon grease in the smoking hot skillet to give us that extra crispy edge. Now, I'm hungry. Toodles.

    This is almost exactly how I make my corn bread, minus the butter and the bacon fat. I have always used honey to sweeten and an olive oil for the fat.
