This is a weight watcher's recipe that I have seen on hungrygirl.com and sparkpeople.com. These really are so good and are super yummy split in half and layered with some sliced strawberries and a dollop of Cool Whip Free. Yum! Yum! Yum!

Pumpkin puree and cake mix are always a pantry staple for me. I'm made this before and people just love it.

Okay, here's a photo for you. :-) These are just wonderful--chocolately, moist, and rich. You'd never guess there was a pumpkin in there too! (Squash, in my case, since there wasn't any pumpkin in the pantry.)
The recipe made 36 good sized mini muffins, that could easily pass for cupcakes. I did add a tsp. of vanilla, and iced some of them with a confectioner's glaze tinted pink. Bake the minis for 12-13 minutes at 400 degrees. Thanks for the great recipe!

My 10 year old and i made these last night about midnight and they were SO good ...i added a 1/2 a cup of mini chocolate chips to them plus frosted a bit on top with a few more chips for decoration . so EASY and so GOOD ! both kids loved them and even DH ate a few and he is super picky ! TY !

OK...saw this recipe in the morning, went shopping bought both chocolate cake mix and spice cake mix, and one large can of pumpkin. My youngest (almost 21) son was here and said even tho the chocolate ones were good, the spice ones were best. I personally love the chocolate!!!
I can see adding some white chocolate chips to the spice and maybe macadamia nuts, and walnuts and orange zest to the chocolate mixture. Ohhhhh wait maybe dried cranberries to the spice ones and dried apple...the possiblities are endless.
