Love the combination of cinnamon chips and oatmeal! One of the best investments I’ve ever made in baking products is the Silpat silicone baking sheet liner! I have 2 of them and they make cookies almost jump off the sheet and clean-up is a snap!... More

  • ½ teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla

  • 5 oz. (1/2 pkg.) Hershey’s cinnamon chips

Directions
  1. In a medium bowl, cream butter.
  2. Gradually stir in sugars, beating well.
  3. Add eggs and mix well.
  4. Add vanilla and stir.
  5. In a large bowl, whisk together flour, baking powder,
  6. baking soda and salt.
  7. Stir into butter/egg/sugar mixture.
  8. Fold in oats, chocolate chips, cinnamon chips and nuts.
  9. Chill dough for 2 hours.
  10. Preheat oven to 350 degrees F.
  11. Roll dough in palm of hands into walnut sized balls.
  12. Bake on ungreased cookie sheet for 12-14 minutes.
  13. Remove from oven and let set for 5 minutes.
  14. Remove from baking sheet to wire rack to cool.
  15. note: Chilling the dough helps keep the cookies from spreading as they bake and adding more vanilla never hurts, does it?

Oh my goodness..these get a five from me...love the idea of cinnamon chips...omg have I seen these before? They sound familiar but I swear I have not ever baked with them. Thank you so much , I can't wait to try these..Im printing out this recipe right now!!

Wow - these look and sound delicious! I really like the addition of the cinnamon chips here - great idea! I'm saving this to try and I'll let you know what I think. It's been a while since I saw the Hershey’s cinnamon chips...I'm going to start looking closer. Great post - thanks! =)

Oh, I like these. I'm a huge oatmeal/chocolate chip fan, but love the addition of the cinnamon chips. Was actually planning on making some today, now I have to run to the store to get the cinn.chips. I'll let you know how they come out. Oh, and I love Silpat, too!

Oh yes! Love cookies, this is a keeper!!! got my 5

COOKIE LOVE HERE! WILL HAVE TO GET THE LINER!

I wonder how much weight I am going to gain after joining this sight? Love the cookies!

I have a 1/2 pkg of cinnamon chips left over from a muffin recipe - this is the PERFECT use for them...just printed it out...will be my next cookie bake! Thanks!!

Well it took me forever to get to these..but I finaly made them. My friend was kind to send me some bags of cinnamon chips in the mail! I made them the very next day. I loved the taste these wonderful cookies give. The cinnamon chips add some great flavor to the cookies! Thanks!

Oh forgot to tell you my husband Steven took these to the workout club the next morning. Everyone loved them!

I just had two requests for your recipe from friends at the gym, this morning!

Im making these again for a spa party Im hosting this weekend! I love em!

This one surely looks good. We have a hard time finding cinnamon chips now in Canada. I only have one bag left in the pantry. I will try your recipe and let you know how it turned out.

Perhaps the stores will carry them closer to Christmas time! Thanks for the invite!

Don't mean to mess with perfection but I will try this recipe and cut the sugars in 1/2 as well as use 1 c. of whole wheat flour & 1 c. white. May replace the cinnamon chips with 1 t. ground cinnamon too. Hope this doesn't offend!

Also...for the chocfulofsin oatmeal cookies, may replace 1/2 c. unsweetened applesauce for 1/2 the butter. I know, I'm hopeless!

These sound wonderful the way they are, but I'm liking Texyjay's healthier options - except for replacing the cinnamon chips; those have got to stay! Might try the applesauce etc, though. THen thay'd have to be called half-full-o-sin oatmeal cookies!

These cookies sound yummy!! I want to try them and add it to my cookie trays for the holidays...but cinnamon chips...I dont think Ive ever seen them?? Im on a mission to seek them out, wish me luck..lol

Yummy recipe Conner and I can't wait to bake these.

Yummy - I am baking oatmeal/raisin cookies today but I am unable to find cinnamon chips in my area. I will figure out something.

Hello there,
I have never seen cinnamon chips...did you mail away from a baking supply house or something?
I will have to look for them.
I love my silicone baking set I got off QVC!! I'm not sure if they still have it but I got 10 pieces for under $50! I use my baking liners all the time and the pans etc...It revolutionized the way I bake. (I rarely use non-stick cooking spray any more.)

What a great recipe.I know that I need to make these again soon.

Oh, I have to make these soon. Now, I've never seen cinnamon chips and I was checking the baking aisle carefully the other night to make that darn kitty litter cake for the Halloween party at work. Maybe they will stock them soon. But I love crispy oatmeal cookies...I used to make some with Grapenut Flakes, raisins, chocolate, nuts and lots of cinnamon. They were delicious. I know this recipe is good.
