Ingredients

How to make it

  • In a medium bowl, cream butter.
  • Gradually stir in sugars, beating well.
  • Add eggs and mix well.
  • Add vanilla and stir.
  • In a large bowl, whisk together flour, baking powder,
  • baking soda and salt.
  • Stir into butter/egg/sugar mixture.
  • Fold in oats, chocolate chips, cinnamon chips and nuts.
  • Chill dough for 2 hours.
  • Preheat oven to 350 degrees F.
  • Roll dough in palm of hands into walnut sized balls.
  • Bake on ungreased cookie sheet for 12-14 minutes.
  • Remove from oven and let set for 5 minutes.
  • Remove from baking sheet to wire rack to cool.
  • note: Chilling the dough helps keep the cookies from spreading as they bake and adding more vanilla never hurts, does it?

    Oh, I have to make these soon. Now, I've never seen cinnamon chips and I was checking the baking aisle carefully the other night to make that darn kitty litter cake for the Halloween party at work. Maybe they will stock them soon. But I love crispy oatmeal cookies...I used to make some with Grapenut Flakes, raisins, chocolate, nuts and lots of cinnamon. They were delicious. I know this recipe is good.

    Hello there,
    I have never seen cinnamon chips...did you mail away from a baking supply house or something?
    I will have to look for them.
    I love my silicone baking set I got off QVC!! I'm not sure if they still have it but I got 10 pieces for under $50! I use my baking liners all the time and the pans etc...It revolutionized the way I bake. (I rarely use non-stick cooking spray any more.)

    These cookies sound yummy!! I want to try them and add it to my cookie trays for the holidays...but cinnamon chips...I dont think Ive ever seen them?? Im on a mission to seek them out, wish me luck..lol

    These sound wonderful the way they are, but I'm liking Texyjay's healthier options - except for replacing the cinnamon chips; those have got to stay! Might try the applesauce etc, though. THen thay'd have to be called half-full-o-sin oatmeal cookies!

    Also...for the chocfulofsin oatmeal cookies,may replace 1/2 c. unsweetened applesauce for 1/2 the butter. I know, I'm hopeless!

    Don't mean to mess with perfection but I will try this recipe and cut the sugars in 1/2 as well as use 1 c. of whole wheat flour & 1 c. white. May replace the cinnamon chips with 1 t. ground cinnamon too. Hope this doesn't offend!

    This one surely looks good. We have a hard time finding cinnamon chips now in Canada. I only have one bag left in the pantry. I will try your recipe and let you know how it turned out.

    Well it took me forever to get to these..but I finaly made them. My friend was kind to send me some bags of cinnamon chips in the mail! I made them the very next day. I loved the taste these wonderful cookies give. The cinnamon chips add some great flavor to the cookies! Thanks!
