How to make it

  • Mix all the spices together to make Chef Jon's grilling rub
  • pat pork dry and rub with the spices (Chef Jon's Grilling Rub).
  • Let it chill for at least 30 min.
  • Prepare grill for cooking.Fire is medium-hot (you can hold your hand 5 inches above rack for 3 to 4 seconds).
  • Grill on lightly oiled grill rack over medium-hot fire, turning frequently, until an instant-read thermometer inserted diagonally 2 inches into meat registers 155 degrees F, about 20 minutes. Transfer to a cutting board, then tent loosely with foil and let stand 10 minutes before slicing.

    chefjon, thanks for the post and picture - I do enjoy the visuals! We love doing tenderloins on the bbq...they are so flavorful with a good marinade, and yours has a great combo of flavors - will definitely try. The tenting makes the meat so juicy and moist, it's as good as most steaks!!

    Mmmmmmm, this sounds so good! Similar ingredients to a fave marinade of mine. I would "fire up the bar-bee" but it's about -20C outside right now. Maybe once we get up to -10C we'll try this one out. Thanks for posting!
