Chef Jon's Grill Rub

Ingredients
  • Pork tenderloin about 1 lb
  • 2 teaspoons Cilantro leaves finely chopped
  • 1 teaspoons smoked sweet Paprika
  • 2 Tablespoons Brown Sugar
  • 1 teaspoons coarse Salt
  • 1 teaspoons fresh ground Pepper
  • 1 teaspoons ground Coriander
  • 1 teaspoons Cumin
  • 1teaspoons Onion powder
  • 1 teaspoons Garlic powder
  • 1/2 teaspoon Cayenne (this may be omitted or adjusted to taste)

Directions
  1. Mix all the spices together to make Chef Jon's grilling rub
  2. pat pork dry and rub with the spices (Chef Jon's Grilling Rub).
  3. Let it chill for at least 30 min.
  4. Prepare grill for cooking.Fire is medium-hot (you can hold your hand 5 inches above rack for 3 to 4 seconds).
  5. Grill on lightly oiled grill rack over medium-hot fire, turning frequently, until an instant-read thermometer inserted diagonally 2 inches into meat registers 155 degrees F, about 20 minutes. Transfer to a cutting board, then tent loosely with foil and let stand 10 minutes before slicing.

Mmmmmmm, this sounds so good! Similar ingredients to a fave marinade of mine. I would "fire up the bar-bee" but it's about -20C outside right now. Maybe once we get up to -10C we'll try this one out. Thanks for posting!

Chefjon, thanks for the post and picture - I do enjoy the visuals! We love doing tenderloins on the bbq...they are so flavorful with a good marinade, and yours has a great combo of flavors - will definitely try. The tenting makes the meat so juicy and moist, it's as good as most steaks!!
