How to make it

  • Preheat your oven to 450 degrees. Place your oven rack in the lower third of your oven.
  • Prepare your potato wedges. Attempt to cut each wedge into similar sizes for even roasting.
  • Toss the wedges in a bowl with the olive oil, sea salt, pepper and rosemary (optional).
  • Roast for 20 to 25 minutes, until fork tender.
  • Sprinkle with the balsamic vinegar, shaking the pan to coat the potatoes. Roast until vinegar evaporates, about 4 minutes.
  • Season with more sea salt and pepper and serve.

    Be careful not to roast your potatoes in a glass (pyrex) pan. When I slid the pan out of the oven to add the balsamic vinegar, the pan exploded into a hundred shards of glass. Fortunately I wasn't injured, but could have been. The cooler vinegar touching the hot pan caused the explosion.

    Delicious!! These fingerlings were a little large and from past experience ((living @ high altitude in colorado)) i par-boiled them whole for about 10 minutes then followed the recipe. Used a cracked pepper blend and dried rosemary. Truly delicious!!

    These had a lot of flavor to them as I did use the fresh rosemary. After reading pso's comment and seeing the amount of salt on the potatoes before they went into the oven, I didn't add more sea salt or pepper at the end. After eating them, I think it would have been a bit much! Delicious tangy smoky kinda flavor with the balsamic. Added my picture, too.

    You got me to Wikipedia and Google again. I hadn't heard of fingerling spuds. It turns out they might be out of season. I see that Wolfpackjack found 'em at his store.
