I love Bread Salads. The bread soaks up the flavors of the fresh veggies and dressing. This recipe is as close as I can come to my grandmother's.

Ingredients
  • 1 Pomegranate
  • 1 1/2 cup chopped Tomatoes
  • 1/4 cup chopped fresh Mint
  • 1 cup cubed, peeled Cucumber
  • 1 cup minced Scallions
  • 1 cup chopped Parsley
  • 1/2 cup chopped young Purslane Leaves ( Watercress can be substituted.)
  • Dressing:
  • 1/4 cup Olive Oil (or more to taste)
  • 1 Tsp Salt
  • 1/4 Tsp Ground Black Pepper
  • 1 1/2 Tsp ground Sumac (Optional)
  • 1/3 cup fresh Lemon juice
  • 1 Loaf Arabic Bread (Pita)
  • Olive Oil or Melted Clarified Butter for brushing.

Directions
  1. Split Pita into 2 halves, brush all sides with melted butter or Olive Oil.
  2. Toast in a 300F oven until golden and crisp. Break into small pieces.
  3. Remove the whole seeds from half the pomegratate and toss in a bowl with all the salad ingredients.
  4. Combine Dressing ingredients in a jar and shake to combine. Pour over Salad.
  5. Squeeze juice from the other half of Polmegranate over salad and mix well.
  6. Fold bread pieces into salad immediately before serving.
  7. Garnish with whole mint or parsley leaves.

Delightful..all the flavors..Greeks use purslane alot..very rare to see it in a recipe ..great post, Jim!


This sounds so flavorful. I can't resist it because of the sumac! If I can't find the watercress or purslane what would you suggest? I am anxious to try this. A 5.

Hey Jim hon - I made this on Sunday and (alas!) I don't access to pomegranates this time of the year and I had to sub watercress for the purslane - but I did get some great-looking organic watercress. (I have ordered purslane seeds and will have my own purslane stash in time. Yep.)

Anyway, this is a stellar salad, m'dear. That dressing is so wonderful and everyone had a fit over the combinations of flavors. Divine. I made with your Baked Stuffed Kibbee (for the second time) and your sister's recipe for Za'taar Bread (see Jim's recipes for both) and it was all so perfect. I wish I could give you another 5 forks, but darn...they just won't let me. I can't wait to add the pomegranate to this party. Thanks so much! ;-)~ Vickie
