A different way to eat those candied sweet taters! Yummy too!!

Ingredients
- 4 - 5 peeled medium sized sweet potatoes
- 1/2 cup sugar or more to taste
- 1/2 stick butter
- 1 or 2 teaspoons vanilla
- dash of cinnamon
- marshmallows
- graham cracker crumbs or vanilla wafer crumbs
Directions
- Cook the sweet potatoes then peel and place in large bowl.
- Add sugar - more or less to taste.
- Add 1/2 stick butter and mash the potatoes.
- Add the vanilla and cinnamon.
- LET COOL COMPLETELY
- Shape a small amount of the cooled sweet potato mixture around a marshmallow until it's about the size of an egg.
- Roll in crumb mixture(graham crackers or vanilla wafers)
- Place in greased casserole dish so sides are NOT touching each other.
- Bake at 350 degrees F for about 12 - 15 minutes.
- WATCH CAREFULLY - DON'T LET THEM GET TOO BROWN!!
